Kinnathappam | Steamed Sweet Rice Cake.



Hello there I am here with a traditional Kerala Muslim recipe known as kinnathappam. Which is made by rice flour and maida(all purpose flour).I learned this recipe from my loving mom.She makes soft and tasty rice cakes for me.This cake is a combination of rice flour,all purpose flour and eggs.For making steamed rice cake all you need is a steamer.Mix all the ingredients thoroughly and pour them onto a deep bottomed plate.One week ago I made this sweet rice cake for my neighbours. Let us check recipe.

Ingredients for kinnathappam:

  1. Rice flour - 1 cup.
  2. Maida / all purpose flour - 1 cup.
  3. Egg-4 numbers.
  4. Coconut milk - 1 1/2 cups. 
  5. Sugar- 1/2 cup.
  6. Cardamom powder-1 teaspoon.
  7. Cashew nuts-10 numbers.
  8. Raisins -10 numbers.
  9. Ghee -3 tablespoon.
  10. Salt to taste.

Method of preparation:

  1. Beet egg with thick coconut milk and cardamom powder.Put sugar into this solution.Filter it.
  2. Add rice flour and maida into it.Mix them thoroughly and make a smooth batter with it without any lumps.
  3. Heat a pan and put 1 tablespoon of ghee in it. Fry cashew nuts and raisins.Keep it aside.
  4. Take a plate(deep bottomed steel or aluminium plate),apply ghee in it and slowly pour the batter made with rice and maida.
  5. Boil water in steamer,place the plate consisting batter to the hot steamer.Place it after the steam is came.
  6. Cook it for 5 minutes and spread cashews and raisins.Cover it and again cook for another 15 minutes.
  7. When it is completely cooked allow it to cool down.After it is cooled take it out from the plate.
  8. Cut then into pieces and serve.

Pictorial:

Take a blender.Put egg,sugar and cardamom into it.


Add in coconut milk powder .Blend it for 2 minutes.


Filter it.


Add this  to rice flour and maida mixture.


Take a steamer with water.


Place a steel plate,apply ghee in it.


Pour the batter into it.


Cashews nuts and raisins are ready..


Heat ghee in a pan fry cashews.. 


Fry raisins in the same pan.


Spread them above the cake after 5 minutes.



When it is done cut and serve..
