How to make soft idlis | Spongy Idli recipe


South Indian recipes are famous for healthy and tastier dishes. Idli is one of the popular dish from south India.Today I am sharing simple secret to make spongy idlis. I have already share this recipe in my recent blog.


Ingredients for Idli:

  1. Raw Rice: 2 cups.
  2. Urad dal: 1 cup.
  3. Fenugreek seeds: 3/4 teaspoons.
  4. Cooked rice: 1 cup.You can use plain rice for this.
  5. Salt: 1 teaspoons.
Preparation:

    1. Soak rice, urad dal, and fenugreek seeds together..soak them for atleast 2 hours.
    2. Clean the rice and dal and put it in the /blender and also add cooked rice and salt.
    3. Add water to just cover it....grind for 2 min . (do not add too much water or too less). I have noticed that my mixie heats up a bit during grinding and this aids in fermentation, so I usually grind it at nidht, and by the next day....the batter would have risen well.
    4. Pour into a large steel vessel.
    5. Keep it covered and untouched to ferment.
    6. Now the idli batter is ready.Do not to stir the batter...when you fill the mould, scoop out from the top....the batter will be airy.
    7. Take your steamer and boil little water for cooking idlis. Take your idli moulds grease it with little ghee or any vegetable oil.This helps to avoid sticking idlis to the mould.
    8. Place this mould to the steamer and cover it .
    9. Cook for 15 minutes in a lower flame.
    10. When the idly is done.Allow it to cool and just take it out with a spoon by swirling the spoon at the bottom of idli.
    11. Serve it with sambar or chutney..
