Drumstick stir fry | Muringakka thoran

Drum stick coconut stir fry.
Drumstick or muringakkai(in malayalam) is a very popular vegetable in Asia. 
The taste and nutritious value of drumstick and its leaves make it more valuable. Both leaves and drumstick can be consumed, The only portion consumed is the soft white interior in which the seeds are embedded.The drumsticks are peeled and cut into 4 to 5 cm before cooking it..
Here my mom make it by peeling its while interior portion to eat easily..:)


Ingredients:
  1. Drumstick/Muringakka-3 to 4 numbers.(Peel and take white portion with seeds)
  2. Grated coconut-1/4 cup.
  3. Green chillies-2 numbers.
  4. Mustard seeds-1/4 teaspoon.
  5. Curry leaves-few.
  6. Turmeric powder-1/2 teaspoon.
  7. Cumin powder-1/4 teaspoon.
  8. Oil-2 tablespoon.
  9. Salt and water as required.

Method of preparation:
  1. Peel the interior white part of drumstick and keep this fleshy part aside.
  2. Pulse coconut along with green chillies,cumin powder and turmeric powder in a blender.
  3. Heat oil in a pan. Put mustard seeds and allow it to crack. Then add curry leaves into it.
  4. Add coconut mixture and saute for few seconds..
  5. Add in required salt into it.
  6. Add peeled drumstick into it.Mix it well and add about 2 tablespoon of water and cover it.
  7. Turn the flame to simmer and cook it.

Serve as a side dish with plain rice..
