Squid Roast Recipe | Kerala style Kanava/Koonthal roast


Squid Roast is one of my favorite seafood dishes. Squid roast is also known as kanava or koonthal roast. This is a spicy dish you can make it less spicy.


Ingredients:
  1. Squid-cleaned and cut into small pieces- 500 gms
  2. Onion - 2 numbers, Sliced.
  3. Green chilies- 3 numbers, Slit.
  4. Ginger & garlic - 2 tablespoons,crushed.
  5. Curry leaves- 2 sprigs
  6. Tomato chopped- 1 medium sized.
  7. Red chili powder- 1 to 2  Tsp
  8. Turmeric powder-1/4 tsp
  9. Coriander powder- 1 Tsp
  10. black pepper powder-1/4 tsp
  11. Garam masala powder-1/2 tsp
  12. Fennel powder-1/4 Tsp
  13. Salt to taste
  14. Oil- 2 Tablespoon.


Method of preparation:

  1. Wash and clean squid. Slice into rings. Keep it aside.
  2. Heat oil in a  pan. Saute ginger and garlic, green chilies, & curry leaves for few seconds. Now add sliced onions & saute till it becomes translucent. Add salt to it. Add in all spice powders except garam masala powder black pepper powder.
  3. Add chopped tomato. Stir for a minute.
  4. Add the squid and combine well.
  5. Add in garam Masala powder and black pepper powder. Mix well. 
  6. Cover with a lid and cook on a low heat for 10 minutes. 
  7. Once it is cooked open the lid and roast for few more minutes until it turns dry. Sprinkle few curry leaves and remove from heat.
  8.  Serve hot with rice or chappathi.

Sorry.. I added garam masala powder and black pepper powder after adding the squid .
