Cauliflower Ghee Rice



Hello, there today I am sharing a keto rice recipe called Cauliflower Rice. This is low carb, grain free rice with cauliflower florets. This goes well with beef or mutton curry I have already shared low carb mutton curry recipe. Don't forget to subscribe to my youtube channel Jesni's Foodie days

Time required-20 minutes.
Let us get started.
Ingredients required for Cauli ghee rice are:

  1. Cauliflower florets -3 cups ,(washed and cleaned)
  2. Ghee -1 Tablespoon.
  3. Cloves-3 numbers.
  4. Cinnamon- 1'' stick.
  5. Cardamom-2 numbers.
  6. Black pepper-1/4 Teaspoon.
  7. Bay leaf- 1 Bay leaf.
  8. Fennel seeds-1/2 Teaspoon.
  9. Onion-2 Tablespoon, sliced.
  10. Water as required
  11. Salt to taste.

Method of preparation:

  1. In a saucepan boil cauliflower along with water and salt for 3 to 5 minute. Do not overcook.
  2. Drain the water and let it cool. Grate the cauliflower using a grater or chop it with a food processor.
  3. Heat a large pan and add a tablespoon of ghee.
  4. Add in cloves. cinnamon, cardamom, black pepper, bay leaf and fennel seeds. Saute for few seconds. Add sliced onion and saute until transparent. Add grated or chopped cauliflower and stir-fry for 2 minutes. Do not add any water because it will turn mushy. Add salt to taste and mix well.
  5. Cauliflower rice is ready.. Enjoy with your favourite curry.
