Paneer Butter Masala | Paneer Makhani Recipe.

Paneer butter masala is one of the most popular paneer recipes in Indian cuisine. The near-perfect combination of spiciness and creaminess of its gravy makes it simply irresistible and versatile to be served with any Indian bread/roti. Whether you serve it with tandoori roti, naan and paneer kulcha or with steamed rice, it’s going to satisfy your palate like never before.

Ingredients for making Paneer butter masala :
  1. Paneer cubes-250 gms.
  2. Butter- 2 Tablespoons.
  3. garlic-4-5 cloves.
  4. Ginger-1"piece.
  5. Onion-2 medium sized onions, roughly chopped.
  6. salt to taste.
  7. tomato-2 large tomato, chopped
  8. Cashew nuts-5 to 6 cashew nuts.
  9. Kasuri methi (Dry fenugreek leaves)-1 teaspoon.
  10. Bay leaf-1 bay leaf.
  11. Cinnamon-1 "stick.
  12. cardamom- 4 numbers.
  13. Red chilli powder-1 Teaspoon, I used Kashmiri chilli powder.
  14. Garam masala powder-1/2 Teaspoon.
  15. Sugar-1 Teaspoon.
  16. Butter -1 teaspoon.
  17. cream-2 tablespoons.

Method of preparation:
  1. Heat a nonstick pan and add a tablespoon of butter.
  2. Saute garlic, ginger, onion until it becomes translucent. Add salt to taste.
  3. Now add chopped tomatoes and saute until the tomato turns mushy.
  4. Add in cashew nuts and mix well. Remove this from heat and let it cool completely.
  5. Transfer the gravy to a mixer jar and grind to a smooth paste. Add little water if needed.
  6. Dry roast Kasuri methi for few seconds and set it aside.
  7. Heat a pan and add a tablespoon of butter. Saute bay leaf, cinnamon stick and cardamom in butter for few seconds. Add red chilli powder and saute on a very low flame.
  8. Strain and add prepared onion tomato paste. Add little amount of water if needed.
  9. Cook the gravy for 5-10 minutes.
  10. Add sugar, butter and mix well.
  11. Now add in paneer cubes and coat the gravy by mixing gently. Cook the paneer for 2 minutes.
  12. Add garam masala powder and cream, mix it well.
  13. Add roasted Kasuri methi and mix well.
  14. Serve it with hot tandoori roti or nan.
