Ingredients required in this recipe are:

  1. Tutti Frutti-1/2 Cup (Homemade tutti-frutti)
  2. All purpose flour/maida- 1 Tablespoon. (For coating)
  3. Eggs-3 eggs(at room temperature)
  4. Powdered Sugar -1 cup.
  5. Oil-1/3 Cup.
  6. Vanilla essence-1 Teaspoon.
  7. All-purpose flour-1 Cup.
  8. Baking powder-1 teaspoon
  9. Baking soda-1/4 teaspoon.
  10. Milk-1/4 Cup(room temperature)
  11. Tutti Frutti for garnishing.

Method of preparation:

  1. Grease the tin (rectangular tin 10"x4.3''x2.8'') with oil or butter. Then line with a parchment/butter paper.
  2. Preheat the oven at 180-degree Celsius for 10 minutes.
  3. Coat tutti frutti with a tablespoon of all-purpose flour. This is to prevent them from sinking to the bottom of the cake. Keep this aside.
  4. Seperate egg yolks and whites into different bowls(use a large bowl)
  5. Beat the egg white for 2 minutes or until it turns airy and fluffy. Add 1/2 cup of powdered sugar little by little and beat the egg white until stiff peaks form. It may take 5 minutes.
  6. Keep this aside.
  7. Take egg yolks in a large bowl. Add powdered sugar(1/2 Cup)
  8. Beat this for 5 minutes or color changes to pale yellow. Add oil and beat well. You can add milk to this at this time.
  9. Sift the flour with baking powder and baking soda. Add the dry ingredients to the egg yolk mixture. Fold and mix well. Add tutti frutti and mix well. do not over mix.
  10. now add Egg white in three additions. Gently fold and mix well.
  11. Cake batter is now ready. Transfer the batter to the prepared cake tin and tap the tin to remove the air bubbles if any.
  12. Sprinkle some tutti frutti at the top of the batter.
  13. Bake the cake for 35-40 minutes at 180 degrees Celcius preheated  oven, or bake until a toothpick inserted should come out clean.
  14. Let it cool down to the room temperature and remove from the tin. Slice and enjoy..
