Afgani pulav | Kabuli pulav | Afgani beef pulav

Kabuli Pulav or simple Afghani Pulao is a traditional Afghan dish and no celebration is complete without this super yummy delicious dish. I am sharing afghani rice with beef, Can also make this with chicken or mutton. This Afghani Kabuli pulao dish is made with Sella rice infused with big flavor from spices, onions, raisins, carrots, and almonds.
This rice is not spicy and it is lightly sweetened.

Let us get started,
Ingredients required in this recipe are :
To cook meat :
  • Oil-1/2 cup
  • Onion-2 medium size, sliced.
  • Beef-1kg, cut into medium sized pieces.
  • Garlic paste- 1 tablespoon.
  • Cardamom powder-1/4 teaspoon.
  • Garam masala powder-1 Teaspoon.
  • Water-2 cups.
  • Salt to taste.
To cook rice:
  • Sugar-1 tablespoon.
  • Sella rice/ Basmati rice -2 Cups.
  • Garam masala powder-1/2 teaspoon.
  • For frying meat:
  • Oil- 2 Tablespoons.
  • Onion-1/2 onion, thinly sliced.
  • Cooked beef.
  • Garam masala-1/4 teaspoon.
  • Salt to taste.
For garnishing:
  • Almonds-1/4 cup (peeled)
  • Golden raisins-2 tablespoons.
  • Carrot-1 cup, julienne
  • Oil-1 tablespoon.
  • Sugar-1 tablespoon.

Method of preparation:
  1. Wash and Soak the rice for about 2 hours. If you are using basmati rice soak for 20-30 minutes. Drain the water and keep this aside.
  2. Heat a pressure cooker over medium flame. Add a half cup of cooking oil . Once the oil is heated add sliced onion and fry until golden color. To this add cleaned beef cubes and saute for few seconds.
  3. Add garlic paste, cardamom powder,garam masala powder, and salt to taste. Add enough water to this. I added about 2 cups of water. Mix this all together and cover the pressure cooker. Cook this for about 15 minutes. If you are using the normal vessel, cook it for about 45 minutes over a medium-low flame.
  4. Once the beef is cooked strain the broth using a strainer and keep it aside.
  5. Heat a large vessel add 1 tablespoon of sugar and let it caramelize. Measure 2 cups of beef broth and add. Also, add an extra 2 cups of water. (double quantity of rice)
  6. Add cardamom powder,garam masala powder and salt to taste. Once the water starts boiling add soaked rice and mix this well. Cover and cook over low flame. Make sure it does not stick to the bottom.
  7. Heat a pan with 2 tablespoons of oil. Add sliced onion and fry until golden. To this add cooked beef and fry until golden brown and shiny. Add garam masala powder and mix well. Keep this aside.                                                                   
  8. Heat a pan with a tablespoon of oil. Fry blanched almonds and raisins. Keep that aside.
  9. In the same pan fry the carrots(julienne) with a tablespoon of sugar.
  10. Once the rice cooked completely add fried beef on top and add fried almonds, raisins and carrots.                                                        
  11. Cover it and steam for another 10 minutes on very low flame.


Afgani pulav/ Kabuli pulao is now ready.. Enjoy..
