Tomato Chutney | thakkali chutney recipe

Today I am sharing an easy tomato chutney recipe. Simple Tomato Chutney is the perfect accompaniment to idli and dosas! I have used very less spice here, only 3 dried red chillies. If you love spice, feel free to double or even triple the amount. A simple tadka (tempering) of curry leaves and mustard seeds, in the end,
is optional but highly recommended. I can’t eat my chutney without a simple tadka but you can skip it.
This vegan south Indian tomato chutney is easy to make with basic pantry ingredients
Ingredients for tomato chutney :

  1. Coconut oil-1 tablespoon.+1 tablespoon.
  2. Shallots-2 tablespoons, chopped.
  3. Dried red chillies-2 or 3.
  4. Tomato-1 large tomato, chopped.
  5. Mustard seeds-1/4 teaspoon.
  6. Curry leaves-few.
  7. Salt to taste.

Method of preparation:

  1. Heat oil in a pan and add chopped shallots and dried red chillies. Saute until the shallots become translucent. Add chopped tomato to this and salt to taste. Saute the tomatoes until soft and mushy.
  2. Turn off the heat.
  3. and let it cools down slightly. Grind this to a smooth paste. Transfer to a bowl.
  4. Heat a tablespoon of oil in a pan and splutter mustard seeds. Add a few curry leaves and remove from heat. Pour this over the chutney and serve.
