Vegetable Biriyani

How to prepare vegetable biriyani-Vegetable dum biriyani-Vegetable biriyani recipe.


This recipe will helps you to cook vegetable biriyani more easier.This is a very simple recipe.This goes well with curd salad/raitha and pickle.If you have ready with your chopped vegetables you can make this biriyani in less time.You can add your favourite vegetables in this.Even bachelors can prepare this. There is no heavy duty for making this. Here is a simple recipe of making tasty and healthy biriyani. Step by step tutorial for making veg biriyani with images.


Ingredients for vegetable biriyani:
  1. Vegetables- Chopped(I used 2 potatoes,1 carrot,1/4 cup green peas)
  2. Ginger and garlic-crushed,2 tablespoon.
  3. Onion chopped-3 numbers,Medium sized.
  4. Green chillies-Slitted.4 to 5.
  5. Tomato-1 big.Sliced.
  6. Curry leaves-few.
  7. Coriander leaves-few chopped.
  8. Turmeric powder-1 teaspoon.
  9. Red chilli powder-1/2 tablespoon.
  10. Coriander powder-1 tablespoon.
  11. Garam masala powder-1 teaspoon.
  12. Soy sauce-1/4 teaspoon(Optional)
  13. Salt-1 teaspoon.
  14. Oil-2 tablespoon.
Ingredients for making rice:
  1. Basmati rice / Long grain rice-2 cups
  2. Lemon juice-juice of 1 lemon .
  3. Fennel seeds-1/4 teaspoon.
  4. Clove-5 numbers.
  5. Cinnamon-2" piece
  6. Cardamom-3 numbers.
  7. Bay leaf-1 leaf.
  8. Water -As required.
  9. Salt -As needed.
Other ingredients:
  1. Ghee-2 tablespoon.
  2. Cashew nuts-10 numbers.
  3. Raisins-10 numbers.
  4. Onion-1 small thinly sliced.
  5. Coriander leaves-finely chopped,2 tablespoon.
Method of preparation:

Step 1: Making rice-
  1. Wash and soak rice for 15 minutes.After 15 minutes drain it and set aside.
  2. Boil more water in a deep bottomed pan .Add salt,lemon juice,fennel seeds,cloves,cinnamon,cardamom,bay leaf into it.
  3. Add in the washed rice to it.Cover it and cook.(Water should be more than double of the rice.)

  4. When rice become 3/4 cooked drain off the water and keep this aside.
Step 2: Making gravy:
  1. Heat a pan with oil in it. Add in ginger,garlic,onions,green chillies and curry leaves.Add salt to it.Saute well.When its raw smell disappears add in sliced tomato to it.


  2. When the tomatoes are completely cooked add in soy sauce to it. Mix them well.
  3. Add in your veggies..I added grated carrot,cooked green peas and potatoes. Saute for some time.


  4. Add in spice powders to it.Mix them well.Add little water and cook for 5 to 10 mins.Add in coriander leaves to it.


  5. Gravy is ready
Step 3: Making topping for biriyani:

  1. Heat ghee in a pan fry cashewnuts and raisins .
  2. Then fry slice onion in the same pan by adding little oil to it.  
Next step is to combine these rice and gravy.
Combination or process of Dum:

  1. Take your biriyani pot or you can use non stick biriyani pot or any other type.but it must be deep bottomed.
  2. Spread some ghee at the bottom,spread it.Put half of veg masala gravy to it .slowly spread the.
  3. Then put rice above them(half of rice).Now repeat the same process.
  4. At last put the caramelised onion,fried cashews and raisins.
  5. Cover the biriyani pot with aluminium foil,tightly.Cover with a lid and place it in lower flame for 15 minutes.This is a method of dum process.
  6. After 15 minutes,your biriyani is ready to serve.
Mix the masala and rice well.. Serve as hot..


Serve this with salad and a good pickle..
