Lets get cooking..
Ingredients for making pickle:
- Raw Mangoes-Medium size 3 to 4 numbers (Cleaned (not too small),chopped-with its skin)
- Mustard seeds-1 tsp
- Fenugreek seeds-1 tsp
- Red chilli powder-1 or 2 tbsp (According to your spice level)
- Turmeric powder-1/2 tsp
- Fenugreek powder-1/2 tsp
- Asefoetida-1/2 tsp
- Jaggery powdered-1 cup(Or can use sugar instead of that)
- Vinegar-3 tbsp
- Ginger-Finely chopped 3 tbsp
- Garlic pods-1 full garlic's(about 10 pods)
- Red chillies-3 to 5 numbers slitted
- Curry leaves-few
- Oil-As required for tempering
- Salt-As required
Method for making sweet mango pickle:
- Marinate mango pieces with turmeric powder and salt for 1 hour.
- Then heat oil in a heavy bottomed pan.
- Add mustard seeds and fenugreek seeds.Wait for 3 seconds.Allow it to splutter.
- Then add Ginger,garlic,green chillies,curry leaves.. Wow... what a smell..
- Saute until goes its raw smell.
- Lower the flame to simmer ..Then add all the spice powders...Then add powdered jaggery and vineger.Allow to melt jaggery..
- Then add mango..Turn of the flame and saute for some time..Mix all the ingredients thoroughly..
Allow it to cool ..Then store the pickle in a clean dry container .Can use for a week,if you store in fridge..Serve with rice ,biriyani,pulav and also with chappathis.. Yum..yum..
Notes:
- Always use dry spoon to take pickles.
- If jaggery is not clean you have to strain it once after it is melted.So intially do this step when you added to the pickle.. Stay healthy..:)
