Ingredients needed for this pumpkin chilli curry:
- Pumpkin - Cleaned,peeled and cut into small cubes.
- Onion-1 big .Crushed.
- Ginger and garlic-2 tablespoon.
- Green chillies-finely chopped.
- Tomato paste-2 tablespoons.
- Curry leaves-2 sprig.
- Turmeric powder-1/4 teaspoon.
- Red chilli powder-1 tablespoon.
- Sugar-1 teaspoon.
- Vinegar-2 teaspoon.
- Cooking oil-As required.
- Salt-To taste.
- Water-1 cup.
Method of preparation :
- Heat a pan add 2 tablespoon of cooking oil.
- Put crushed onion,ginger and garlic one by one..Stir regularly
- Add salt to taste. Saute until raw smell of onion and ginger garlic goes.Add in green chillies to it.
- Add in tomato paste to it. Add in turmeric powder and red chilli powder to it.
- Turn the flame to lower.Add in enough water for cooking pumpkin.About 1 cup.
- Cover it and cook pumpkin completely..Turn of the flame when pumpkin is completely cooked.
- Spread fresh curry leaves and turn off the flame.
- Serve after 5 minutes.
Serving suggestions:
- Serve with cooked rice.
- Serve with chappathi.
