Carrot stir fry| Carrot mezhukk purattiyath

Hai my dear reader.. I want to tell you something. I have a cute little angel,my baby she doesnot allow me to stay in my kitchen but I have to cook something for my hubby.. She always want to stay in my hands.So I think today I have to make something fast. I took 2 big carrots from my refrigerator and just peel and grate carrots quickly.So the carrot stir fry look like this :).You can chop carrot thinner I know this is too much thinner right?
Any way Let us start cooking?? 

Ingredients for this stir fry:
  1. Carrots-2 big(Here we got large carrots)
  2. Onion-1 medium sized.
  3. Green chillies-2 numbers.
  4. Curry leaves-1 sprig.
  5. Mustard seeds-1/4 teaspoon.
  6. Salt to taste.
  7. Oil-2 tablespoon.

Preparation:

Clean and peel carrots.Grate them or chop into thin pieces.This will help to cook carrots easier.Slice one medium sized onion and slit the green chillies.
Heat oil in a pan which you decide to cook.Add 1/4 teaspoon of mustard seeds. Let it crack.Add onion,curry leaves and green chillies.Saute them for 1 minute.At that time the colour of onion will slightly change. Add carrot into it and saute well. Cover it and cook it.Keep stir at regular intervals. 
Remember to turn the flame to simmer..
When it is completely cooked serve them with plain rice as a side dish..
