Chicken majboos 

Majboos is an arabic common dish.It is a type of arabian biriyani. It is made with lamb or chicken.The traditional way of making majboos is boil water in a large pot along with spices,onion,rice and also chicken.Rice is also cooked in same chicken stock.Here I made this majboos in a different my own method. It comes out delicious. I partially fried the chicken pieces first and then it cook along with the rice and spices in the same pot.I also add potato to it... So it tastes delicious.. Ingredients for making arabian majboos:
  1. Long grain rice/basmati rice-2 cups.
  2. Chicken pieces-500 gms.
  3. Onion-3 numbers,chopped.
  4. Potatoes-2 medium sized chopped.
  5. Ginger and garlic-1 tablespoon crushed each.
  6. Green chillies-4 numbers slitted into two.
  7. Tomato-1 big sliced.
  8. Curry leaves-2 springs.
  9. Turmeric powder-1/4 teaspoon.
  10. Red chilli powder-1/4 tablespoon.
  11. Garam Masala powder-1 teaspoon.
  12. Coriander powder-1/2 table spoon.
  13. Lemon juice-juice of 1 lemon.
  14. Fennel seeds-1/2 teaspoon.
  15. Cinnamon-2 inch piece.
  16. Clove-4 numbers.
  17. Cardamom-4 numbers.
  18. Bay leaf-2 numbers.
  19. Water-3 1/2 cups
  20. Salt as required.
  21. Oil as required.
Other Ingredients:
  1. Ghee-3 tablespoons.
  2. Cashew nuts-15 numbers.
  3. Raisins-15 numbers.
  4. Onion-1 small thinly sliced.
  5. Coriander leaves-Finely chopped,3 tablespoon.
  6. Puthina leaves/Mint leaves-chopped.
Preparation of majboos: 

  1. Marinate chicken pieces with turmeric,garam masala and red chilli powder for 2 hours..
    Shallow fry/partially fry this marinated chicken pieces and set this aside.
  2. Fry cashew nuts,raisins and slightly sliced onions in ghee.
  3. Shallow fry potatoes in the same oil that chicken is fried.Keep this aside.
  4. Wash riceand soak rice for 15 monutes then drain water .
  5. Let us make rice.Heat a large pan/biriyani pot.Add little oil to it.(I used the same oil that chicken is done.)Fry all whole spices to it.Then add crushed ginger garlic.I crushed green chillies along with them.You can skip this step.

  6. Saute them for 2 minutes.Then add onions and tomato.Saute them well until onion becomes translucent.Add in 1/4 teaspoon of turmeric powder and garam masala powder.Add measured rice(2 cups) to it.Then add 3 3/4 cups of water and adjust salt.

  7. Add fried potatoes,chicken pieces.Add in lime juice to it..stir it slowly.Cover it and cook in a lower flame.When water is completely absorbed turn of the flame.

  8. Garnish it with cashew nuts ,raisins,coriander leaves and fried onions..

Serve with salad.. enjoy..
