Camel meat Biriyani (Arabian Biriyani)

Another biriyani.. Camel meat biriyani is specially made in Arabian countries.. I made this biriyani in malabar style dum biriyani. Let me share the way of making my biriyani.. :)

Ingredients required for camel meat biriyani.
Ingredients For gravy:
  1. Camel meat- Cleaned and cut into medium sized piece.
  2. Onion-3 numbers,chopped.
  3. Ginger and garlic-1 tablespoon crushed each.
  4. Green chillies-4 numbers slitted into two.
  5. Tomato-1 big sliced.
  6. Curry leaves-2 springs.
  7. Yogurt-1 tablespoon.
  8. Turmeric powder-1/4 teaspoon.
  9. Red chilli powder-1/4 tablespoon.
  10. Garam Masala powder-1 teaspoon.
  11. Salt-as needed.
  12. Oil as required.
Ingredients For Cooking Rice:

  1. Basmathi rice/Long grain rice-2  cups.
  2. Lemon juice-juice of 1 lemon.
  3. Fennel seeds-1/2 teaspoon.
  4. Cinnamon-2 inch piece.
  5. Clove-4 numbers.
  6. Cardamom-4 numbers.
  7. Bay leaf-2 numbers.
  8. Water as required for cooking rice.
  9. Salt as required.
Other Ingredients:
  1. Ghee-3 tablespoons.
  2. Badam/Almonds-10 numbers.
  3. Cashew nuts-15 numbers.
  4. Raisins-15 numbers.
  5. Onion-1 small thinly sliced.
  6. Coriander leaves-Finely chopped,3 tablespoon.
  7. Puthina leaves/Mint leaves-chopped.
Method of making camel meat biriyani:

Preparation of rice:
  1. Wash rice and soak them for 15 minutes.Drain it and keep it aside.
  2. Boil water in a large deep bottomed pan.Add in lemon juice,fennel seeds,cloves,cinnamon,cardamom,bay leaf into it.Put the soaked rice into it.
  3. Cover it and cook.(Water should be more than double of rice.)
  4. When rice 3/4 cooked turn off the flame and drain water.Keep aside.
Preparation of gravy:
  1. Heat oil in a pan,add in ginger garlic saute for 2 min,Add in onion saute for 3 min.Add in green chillies,curry leaves,tomato, Salute for few minutes.
  2. Add in all spice powders into it.Turn the flame to simmer.
  3. Add in curd(yoghurt) and saute well.Then slowly put camel meat to it.Cook meat in the masala.If water is required for cook meat add a little water into it.
Making topping for biriyani:

  1. Heat ghee in a pan fry almonds,cashewnuts and raisins .
  2. Then fry slice onion in the same pan by adding little oil to it.Keep this aside.
Next step is to combine these rice and camel meat gravy.
Dum process :

  1. In your biriyani pot add half of the masala gravy and just spread it..
  2. Next put half of rice and spread.. Put some ghee,fried cashews,almonds and raisins.. 
  3. Spread fried onions.Chopped coriander leaves ,mint leaves.
  4. Repeat this steps for one more time.Seal it with aluminium foil and put them into a lower flame above an another iron pan.
  5. Serve the biriyani as hot with onion salad and a good pickle.
