Biriyani Recipe | Step by step Recipe

Here is the recipe for biriyani in my style. This is the simple way of making biriyani. We can also make biriyani in many styles, pressure cooker biriyani,kabsa ,majboos etc...

Chicken Biriyani

I here posting chicken dum biriyani's photo. You can make Mutton biriyani, Beef biriyani in the same way..


Meat Marination

  1. Meat-1 kg
  2. Yoghurt-1/2 Cup
  3. Garam Masala Powder-1tbsp
  4. Turmeric Powder-1/2 Tsp
  5. Red Chilli Powder-1 Tsp
  6. Lemon juice or Vinegar-1 tbsp

Gravy for Biriyani

  1. Onions Sliced-6 medium sized
  2. Green Chillies-5-6 no.s according to your spice level
  3. Ginger Garlic Paste-3 Tsp
  4. Tomato-2 big chopped
  5. Yogurt-2 tbsp
  6. Turmeric Pwd-1 Tsp
  7. Garam Masala Powder-1 tbsp
  8. Coriander Pwd-2 tbsp
  9. Red chilli powder-1 tbsp
  10. Tomato Sauce-1 tbsp
  11. Lemon Juice- Juice of 1 lemon
  12. Coriander leaves-few chopped
  13. Curry leaves-few chopped
  14. Oil-As required
  15. Salt-As required

For Rice

  1. Basmathi Rice-4 Cups
  2. Cinnamon-2 inch
  3. Cardamom-4 no.s
  4. Cloves-3 no.s
  5. Salt-as required
  6. Lemon juice of 1 lemon

Other ingredients for biriyani

  1. Onion-Very thinly sliced
  2. Cashew nuts-15-20 no.s
  3. Raisins-20-25 no.s
  4. Coriander Leaves-A handful chopped
  5. Puthina / Mint leaves- A handful chopped.
  6. Rose Water-2 tablespoons
  7. Pineapple chopped-1/2 pineapple
  8. Water -As required.
  9. Ghee/Oil-As needed

Step 1:
  • Take all your ingredients and keep aside.
  • Wash the measured rice and soak them for 10 mins.
  • Cook the rice with a lot of water, required salt, lemon juice and masalas under "For rice".
  • When the rice is partially cooked turn off the flame and drain the water from it.
Step 2:
  • Marinate the meet with the ingredients under "Meet Marination" and keep aside for 1 hour.
  • After one hour cook the meet with 1/2 a cup of water and set aside.

(You can fry the pieces if you want..It is also tasty and it will help the pieces from breaking)

Step 3
  • Let us make the masala gravy for biriyani.
  • Heat oil in a pan and add ginger garlic paste, Onion, green chillies and saute until it is cooked well.
  • Add the tomato, yoghurt and tomato ketchup and saute well for sometime
  • Then add all the leaves listed under the "gravy for biriyani".
  • Next, add all the spice powders. Saute for 3 minutes
  • Gravy is ready. Mix cooked Meet pieces with this gravy and Set Aside.
Step 4:
  • Heat some ghee in a frying pan.
  • Fry onion until brown colour.
  • Next fry cashews and raisins. and set aside..
Step 5:
  • Next is the dum process
  • Apply some ghee at the bottom of a heavy bottomed 1/2 of the gravy and pieces at the bottom and spread it.
  • Next put 1/2 of the cooked rice and spread this. Spread some ghee, rose water, pineapple, fried nuts, onions, raisins, coriander leaves and mint leaves. Repeat this layering process for one more time
  • Cover it and place it for dum.
  • Wait for 25 min... Awesome biriyani is ready

Serve the hot biriyani with salad, pickle and pappadam. Enjoy...
