Kabsa(Simple and tasty recipe)

Kabsa is a famous Arabian Biriyani which has an awesome taste. It is very easy to make kabsa.. The difference of kabsa from the normal biriyani is, the rice is cooked in the water in which chicken cooked. That increase the taste of rice in the biriyani and get an amazing flavour..

  1. Chicken, cut into biriyani sized pieces
  2. Vegetable oil-2 tbsp
  3. Medium onions, sliced-2 to 3
  4. Tomato puree-1 small cup(if using)
  5. Tomatoes, chopped-2
  6. Garlic, crushed-4 cloves
  7. Carrots, grated=2
  8. 4 cardamom pods
  9. 3 sticks cinnamon
  10. Salt and pepper to taste
  11. 2 cups of long grain rice
  12. 1/4 cup raisins
  13. 1/4 cup sliced almonds
  14. Water about 4 cups(for cooking chicken and rice)


  1. Saute onion in oil until it begins to brown. Add chicken pieces, tomato puree, chopped tomatoes and garlic and stir for about five minutes over low heat. Stir in three cups hot water, grated carrot, spices, salt and pepper to taste. Cook over medium heat, covered, about 20-25 minutes, until chicken is done.
  2. Remove chicken. Set aside to keep warm. Stir rice into the liquid in the pan, and cook, covered over low heat for about 35 - 40 minutes, or until liquid is absorbed.
  3. Put rice on a serving platter with chicken pieces arranged around the circumference. Toss raisins and almonds over all.
