 Rice is a staple food in south India.There are various recipes which either calls for direct use of rice or in its some other form like flour, etc. However, among all rice recipes, ghee rice is best recipe due to its simple preparation and heavenly incomparable taste. Ghee rice is not just about mixing ghee in steamed rice but for preparing more delicious steamed rice wherein raw rice grains, nuts and flavoring spices are sauted in ghee before cooking them. The use of cardamom, bay leaf, black peppercorns and cloves simply makes it stand out from others.Here the awesome ghee rice recipe.. I tried and tested.It is really tasty with beef roast or curry...

  1. Long grained rice - 2 cups, washed and drained
  2. Onion - 1, large, finely sliced
  3. Cloves - 6
  4. Cardamom - 2
  5. Cinnamon stick - 1" stick (2 pieces)
  6. Bay leaf - 2
  7. Cashew nuts - 10-12, break into small pieces
  8. Raisins - 10-12 no.s
  9. Salt to taste
  10. Ghee - 4 tbsp
  11. Water - double of rice

Heat a heavy bottomed vessel, add 3 tbsps ghee and allow it to melt. Once hot, reduce flame, add the cashew nuts and saute till golden brown and remove. Add the raisins and saute for a few seconds and remove. Keep aside the cashew nuts and raisins.
In the same cooking vessel, add a tbsp of ghee and once hot, add sliced onion until it is translucent.

Then add the cardamom, cinnamon, cloves and bay leaf. Allow to splutter.
Add the drained rice and saute on low flame for 4 mins. Do not over mix or the rice might break. Add 4 cups of water & salt to taste. Bring to a boil.

Reduce flame to low, place lid and cook till the rice is soft. Remove lid and mix well. Remove onto a serving plate.
Garnish with caramelized onions, cashew nuts,raisins and serve with chicken or paneer curry or chicken roast.
