Manga Curry | Sweet and Spicy Semi-ripe Mango Curry

Hello there, Today I am sharing sweet mango curry recipe.Yummy and easy to make this spicy and sweet mango curry.Normally we made mango curry with raw mangoes. This mango curry is with semi-ripe mangoes which is still a little sour.I am sure you will love this recipe.. Let us get started..

Ingredients for this recipe are:

  1. Semi-ripe mangoes- 3 Numbers cut into pieces.
  2. Turmeric powder-1/2 Teaspoon + 1/4 Teaspoon.
  3. Salt to taste.
  4. Oil -2 Tablespoon.
  5. Mustard seeds-1/2 Teaspoon.
  6. Fenugreek seeds-1/2 Teaspoon.
  7. Garlic-7 to 8 pods, sliced.
  8. Ginger-1/2 " piece, finely chopped.
  9. Green chillies-chopped.
  10. Curry leaves -few.
  11. Asafoetida powder-1/4 Teaspoon.
  12. Red Chilli Powder-2 Teaspoon.
  13. Fenugreek powder-1/4 teaspoon.
  14. Water as needed.
  15. Sugar/Jaggery-2 to 3 Tablespoons.

Method of preparation:

  1. Wash and chopped the semi-ripe mangoes into medium sized pieces without removing the skin.
  2. Marinate the chopped mangoes with half a teaspoon turmeric powder and salt.
  3. Keep it aside for 30 minutes to one hour.
  4. Heat a pan or manchatti ( earthen pot ). Add oil and heat it on a medium flame.
  5.  Add mustard seeds and fenugreek seeds. Allow spluttering mustard seeds.
  6. Now add sliced garlic and ginger.Saute for few seconds. Add curry leaves and green chillies.
  7. Again saute it. Add turmeric powder, red chilli powder, asafoetida powder. Saute for few seconds over a low flame..
  8. Add in chopped mangoes and toss well.
  9. Add fenugreek powder and mix it well.
  10. Add little water, cover and cook for few minutes until mangoes turn soft.
  11. Adjust salt if needed. Add 2 to 3 tablespoon of sugar or a small piece of jaggery and mix it well.
  12. Turn off the flame..
  13. Sweet and spicy mango curry is ready..

Serve it as a side dish with rice..
