Perfect Roasted Chicken

Let us get started,

Ingredients we need in this recipe are:
  1. Whole Chicken:1 Kilograms, with skin(giblets removed).
  2. Ginger garlic paste:1 Tablespoon.
  3. Red chili powder:1 Teaspoon.
  4. Turmeric powder:1/4Teaspoon.
  5. Black pepper powder:1/2 Teaspoon.
  6. Lemon juice: Juice of ½ Lemon
  7. Olive oil:2 Tablespoon.
  8. Butter:1 Tablespoon.
  9. Onions:2 Whole onions, peeled.
  10. Garlic cloves:4 Cloves.
  11. Lemon:1/2 lemon.
  12. Capsicum:1 Large, chopped into cubes.
  13. Potatoes:3 small potatoes, peeled and chopped.
  14. Salt: To taste.

Method of preparation :
  1. In a bowl add ginger garlic paste, red chili powder, turmeric powder, black pepper powder lemon juice, and salt. Mix this well and keep it aside.
  2. Prepare the whole chicken by cutting the wings and pat dry with a kitchen towel. 
  3. Apply the marinade all over the chicken along with 1 tablespoon of olive oil.
  4. Rub the chicken inside and outside very well. Gently lift up the skin of the chicken and apply spice ix beneath the skin. Keep it in the refrigerator for one hour. Then take it back to the room temperature.
  5. Squeeze and place a lemon piece inside the cavity of the chicken. And few whole cloves of garlic.
  6. Tie the legs together with kitchen twine or folded aluminum foil.
  7. Preheat the oven to 220-degrees Celcius / 450-degree Fahrenheit.
  8. Prepare an oven-safe dish. Add potatoes and capsicum. You can add your favorite vegetable too...
  9. Sprinkle some salt and pepper. Add olive oil and mix it nicely.
  10. Push the veggies to the sides of the oven dish. Place the chicken on the top of the chicken with breast side up.
  11. To roast onions in the oven, make few cuts on the onions and place it on the oven rack.
  12. Roast the chicken in the preheated oven for 1 and half hour.
  13. After 1 and half hour remove the onions from the pan. Apply little butter on to the chicken.
  14. Set the oven to broil mode.Bake for another 10 minutes. This helps to make the outer skin brown and crispy.
  15. Let it rest for 15 minutes before carving and serve with veggies.

The chicken roast is ready ... Juicy chicken with crispy skin.. yummy..
