There are five major ingredients in the Amrutham Nutrimix: Wheat, Groundnut, Soybean, Gram Dal and sugar/jaggery.
Ingredients:
- Jaggery-3/4 Cup.
- Amrutham podi/Nutrimix powder - 1 Cup.
- Rice Powder-1/2 cup.
- Cardamom powder-1/2 teaspoon.
- Ripe banana-1 Large.
- Baking soda- A pinch.
- Coconut pieces-1/4 Cup.
- Water-1 Cup or as needed.
- Salt to taste.
Method of preparation:
- In a saucepan add jaggery and water.
- Heat this mixture until jaggery melts completely. Strain this mixture through a strainer.
- In a blender add roughly chopped banana,amrutham powder, cardamom powder, salt to taste and half of the jaggery mixture. Blend this for few seconds and make a smooth paste.
- Transfer this to a bowl and add rice powder and remaining jaggery solution. Mix it very well.
- Add enough water and make a smooth batter like idly batter. Leave the batter to rest for 2 hours.
- After 2 hours add a pinch baking soda and mix well.
- Heat a small pan with a tablespoon of ghee. Add coconut pieces into this and roast till it turns a golden colour.
- Add this to the prepared mixture and mix it well.
- Now heat unniyappam pan/unniyappachatti with enough oil for frying unniyappams.
- Pour this batter in each hole/pits in the pan. Fry them in a medium flame until it turns golden brown colour and crisp.
- Once it is done remove from the oil and drain on to a paper towel.
