Chicken Kabsa | How to make chicken Kabsa ?

Today I am sharing Arabian style chicken kabsa recipe. Chicken kabsa is a popular rice recipe in Arabic countries.
Kabsa (Arabic: كبسة‎ kabsah) is a family of mixed rice dishes that originate from Saudi Arabia where it is commonly regarded as a national dish. The dish is made with rice and meat. It can often be found served in countries such as Saudi, Qatar, Oman, United Arab Emirates, Bahrain, and Kuwait. The dish is also popularly known as majboos (مكبوس/مچبوس ) in most Arab states of the Persian Gulf but is served in the same way.
Let me share the easy recipe for chicken kabsa ,
  1. Chicken-800 gms, divided into two halves.
  2. Long grain rice / Basmati rice- 2 1/2 Cups.
  3. Ghee/Butter-2 Tablespoons.
  4. Onion-3 Large onions , chopped.
  5. Garlic-1 Teaspoon,Finely chopped.
  6. Ginger -1/2 Teaspoon.
  7. Cardamom-7 numbers.
  8. Cinnamon sticks-2 numbers.
  9. Black pepper-1/2 teaspoon.
  10. Cloves-8 numbers.
  11. Bay leaves-2 Bay leaves.
  12. Star anise-1 star anise.
  13. Dried lemon-1 dried lemon.
  14. Turmeric powder-1/2 Teaspoon.
  15. Black pepper powder-1/2 teaspoon.
  16. All spice powder/garam masala powder- 1 Teaspoon.
  17. Tomato puree- Puree of 3 ripe tomatoes.
  18. Carrot-1 grated.
  19. Chicken stock cube-1 cube.
  20. Boiling Water-5 cups.
  21. Butter-1 tablespoon for shallow fry the chicken.
  22. Salt to taste.
  23. Ghee-1 tablespoon.
  24. Almonds-10 -15 numbers, blanched & split.
  25. Raisins-2 tablespoons.
Method of preparation:
  1. Wash and soak long grain rice in water for 30 minutes. Drain the water and keep it aside. 
  2. Heat a large pot with butter or ghee. Add chopped onions and saute well until it turns transparent.
  3. Add garlic and ginger to this and again saute it. Add all whole spices, dried lemon and saute this for 2 to 3 minutes. Now add turmeric powder, black pepper powder and garam masala powder to this. Toss well. Add salt to taste.
  4. Add in tomato puree to this and cook for few seconds.
  5. Place the chicken into this and cook the chicken for about 20 minutes.
  6. Once the chicken is cooked remove it from the gravy and set aside.
  7. Add grated carrot and a cube of chicken stock to this and mix it well.
  8. Now add drained rice to this and add water (5 cups) Double quantity of rice.
  9. Adjust the salt. Cover and cook the rice for about 20 minutes. Occasionally stir to prevent the rice sticking to the bottom.
  10. Once the rice is cooked well remove from the heat.
  11. Now heat a pan with a tablespoon of butter. Shallow fry the chicken pieces for few minutes. Or you can grill the chicken in the oven for 10 minutes.
  12. Heat a small pan with a tablespoon of ghee. Add blanched almonds and raisins. Fry this until golden color.
  13. Transfer the rice to a large serving dish and arrange the chicken on top.
  14. Sprinkle the toasted almonds and raisins. Enjoy....
