Hey there,
Today I am sharing a quick and easy rice recipe for lunch or dinner. We can prepare this potato rice with a few veggies and potatoes.I also did a youtube video for this recipe.
Ingredients used in this recipe are :
- Long Grain Rice/Basmati Rice -2 Cups, washed, soaked (10 minutes) & drained.
- Cooking oil-2 tablespoons.
- Ginger and garlic crushed- 2 tablespoons.
- Green chilly- 1 or 2 slit.
- Onion-1 Cup, Chopped.
- Capsicum-1/2 Cup, chopped.
- Mixed vegetables -1/2 Cup(I used frozen mixed veggies)
- Tomato -1 Chopped.
- Vegetable stock cube-1 Cube(Optional)
- Turmeric powder-1/4 Teaspoon.
- Red Chilli powder-1/2 Teaspoon.
- Garam Masala Powder-1/2 Teaspoon.
- Potatoes-2 potatoes, peeled and chopped.
- Water-3 and half cups(Boiled water)
- Lemon juice-Juice of half lemon.
- Coriander leaves-few.
- Salt to taste.
Method of preparation:
- Heat a large pressure cooker with 2 tablespoons of oil. Add a tablespoon of crushed ginger and garlic. Add in a green chilli. You can add more if you want spicier.
- Saute this for few seconds. To this add a cup of chopped onions. I have taken 1 and a half onion. Add salt to taste. Saute the onions for few minutes until it becomes transparent.
- To this add chopped capsicum, mixed veggies, and chopped tomatoes.
- Saute for 2 to 3 minutes.
- Add 1 cube of vegetable stock and mix it well. I used Maggi vegetable stock. If you don't want this just omit this step.
- Now add turmeric powder, red chilli powder, and garam masala powder. Mix well for few seconds.
- Add chopped potatoes and saute for few minutes.
- Add water and rice to this masala mix. Stir well. Add juice of half lemon. Mix it well. Check the salt and add if needed.
- Cover with the lid and pressure cook for 20 to 25 minutes on medium-low flame.
- After 25 allow the pressure in the pressure cooker to subside completely.
- Open the lid and add a few coriander leaves and mix well.
- Enjoy with salad and pickle..
