Potato Rice | Easy vegetable rice recipe | Lunch box recipe

Hey there,
Today I am sharing a quick and easy rice recipe for lunch or dinner. We can prepare this potato rice with a few veggies and potatoes.I also did a youtube video for this recipe.

Ingredients used in this recipe are :
  1. Long Grain Rice/Basmati Rice -2 Cups, washed, soaked (10 minutes) & drained.
  2. Cooking oil-2 tablespoons.
  3. Ginger and garlic crushed- 2 tablespoons.
  4. Green chilly- 1 or 2 slit.
  5. Onion-1 Cup, Chopped.
  6. Capsicum-1/2 Cup, chopped.
  7. Mixed vegetables -1/2 Cup(I used frozen mixed veggies)
  8. Tomato -1 Chopped.
  9. Vegetable stock cube-1 Cube(Optional)
  10. Turmeric powder-1/4 Teaspoon.
  11. Red Chilli powder-1/2 Teaspoon.
  12. Garam Masala Powder-1/2 Teaspoon.
  13. Potatoes-2 potatoes, peeled and chopped.
  14. Water-3 and half cups(Boiled water)
  15. Lemon juice-Juice of half lemon.
  16. Coriander leaves-few.
  17. Salt to taste.

Method of preparation:
  1. Heat a large pressure cooker with 2 tablespoons of oil. Add a tablespoon of crushed ginger and garlic. Add in a green chilli. You can add more if you want spicier.
  2. Saute this for few seconds. To this add a cup of chopped onions. I have taken 1 and a half onion. Add salt to taste. Saute the onions for few minutes until it becomes transparent.
  3. To this add chopped capsicum, mixed veggies, and chopped tomatoes.
  4. Saute for 2 to 3 minutes. 
  5. Add 1 cube of vegetable stock and mix it well. I used Maggi vegetable stock. If you don't want this just omit this step.
  6. Now add turmeric powder, red chilli powder, and garam masala powder. Mix well for few seconds.
  7. Add chopped potatoes and saute for few minutes.
  8. Add water and rice to this masala mix. Stir well. Add juice of half lemon. Mix it well. Check the salt and add if needed.
  9. Cover with the lid and pressure cook for 20 to 25 minutes on medium-low flame.
  10. After 25 allow the pressure in the pressure cooker to subside completely.
  11. Open the lid and add a few coriander leaves and mix well.
  12. Enjoy with salad and pickle..
