Hello everyone,
Today I am sharing an easy and delicious part of Kerala sadya. Sadya is a traditional feast, where an array of vegetarian dishes, served on a banana leaf in a particular order. No Kerala feast /Sadya is complete without Kalan /Kurukku Kalan /Katti Kalan which is made of yogurt, coconut, and vegetables like raw plantain and elephant yam.
Kalan is prepared for pouring consistency whereas kurukku kalan is a thick curry where yogurt is concentrated. It is little time consuming to make, but its worth all the effort.
Ingredients for making Kurukku kalan/katti kalan are:
- Elephant yam- 1 Cup,diced.
- Raw Plantain- 1 large, peeled and diced.
- Turmeric powder- 1/2 Teaspoon.
- Black pepper powder-1/2 Teaspoon.
- Ghee-1 Teaspoon.
- Yoghurt-1 Cup, Beaten.
- Coconut grated-1 Cup.
- Green chillies-2 Numbers.
- Cumin seeds-1/2 Teaspoon.
- Fenugreek powder-1/2 Teaspoon.(Roasted)
- Water as needed.
- Salt to taste.
For seasoning:
- Coconut oil-1 Tablespoon.
- Mustard seeds-1/2 teaspoon.
- Dry red chilies- 2 to 3 numbers.
- Curry leaves -1 Sprig.
- Wash and peel the skin of plantain and cut the elephant yam into thick cube pieces and set it aside.
- Beat the yogurt/curd well and set it aside.
- Grind the grated coconut, cumin seeds, green chilies with little water to a thick paste and keep it aside.
- In a manchatti/earthen pot add diced yam and plantain. Add turmeric powder & pepper powder.
- Cook them along with enough water. Once the veggies are cooked, allow evaporating all the water from the pot.
- Add a teaspoon of ghee to this and mix really well.
- Now add the beaten curd to this. Add salt to taste. Stir continuously until the gravy is thickened.
- Add the ground paste to this and cook for few minutes on a low flame.
- Finally, add roasted fenugreek powder and mix it well. Turn off the flame and set aside.
- Heat a small pan with coconut oil. Crack the mustard seeds and add dry red chilies and curry leaves.
- Pour this over the prepared kurukku kalan.
Enjoy this yummy side dish with rice..
