Bird's Nest | Malabar snack - KIlikkood Recipe



Bird's nest is a popular Malabar snack. Kilikoodu is a common snack on Ifthar menu. It is crispy and crunchy, looks like a Kilikoodu or bird's nest. 

Let us get started,
Ingredients required for making Bird's Nest :

  1. Chicken - 1 Cup,Cooked with turmeric & Salt,Shredded.
  2. Potato- 2 Potatoes, Boiled, peeled & mashed.
  3. Ginger & Garlic crushed- 1 Tablespoon.
  4. Onion-1 Large, finely chopped.
  5. Green chilies-2 numbers, Finely chopped.
  6. Curry leaves- few
  7. Turmeric powder-1/4 Teaspoon.
  8. Garam Masala Powder-1/2 Teaspoon.
  9. Red chili powder-1 Teaspoon.
  10. Black Pepper powder-1/4 +1/4 Teaspoon.
  11. Egg-4 numbers.
  12. Milk-3 Tablespoons.
  13. Vermicelli-1 Cup, roasted thin vermicelli.
  14. Oil- 2 Tablespoon.
  15. Salt to taste.

Method of preparation :

  1. Hard Boil three eggs and cut it into 4 equal pieces (quarters). Keep this aside. Or you can use quail eggs.
  2. Heat a pan with a tablespoon of oil. Saute ginger and garlic, green chilies and chopped onion along with some salt until the onion becomes translucent. Add a few curry leaves.
  3. Add turmeric powder, red chili powder, and garam masala powder. Saute for few seconds. Make sure to keep the flame at low. 
  4. Now add shredded chicken to this and mix well on medium flame.
  5. To this add mashed potato and give a good mix. Add black pepper powder and mix well. Sprinkle few coriander leaves and salt if needed.
  6. Turn off the flame and allow to cool the mix. Set it aside.
  7. In a small bowl beat an egg with milk, black pepper powder and salt. Break vermicelli into small pieces and set aside. (If it is long)
  8. Now make a ball of the prepared chicken and potato mixture. Flatten it between your palms and place a piece of egg. Shape it into round shaped cutlets. You can watch the above video for the steps.
  9. Make all of them like this. Now dip each cutlet in egg mixture then roll it in vermicelli. Do this for all and set aside.
  10. Now heat enough oil in a pan over a medium heat. Deep fry the bird's nest in hot oil until golden brown. Once it turns golden brown remove from the oil. Drain on to a kitchen tissue. Serve hot with tea.
