Squid Roast is one of my favorite seafood dishes. Squid roast is also known as kanava or koonthal roast. This is a spicy dish you can make it less spicy.
Ingredients:
- Squid-cleaned and cut into small pieces- 500 gms
- Onion - 2 numbers, Sliced.
- Green chilies- 3 numbers, Slit.
- Ginger & garlic - 2 tablespoons,crushed.
- Curry leaves- 2 sprigs
- Tomato chopped- 1 medium sized.
- Red chili powder- 1 to 2 Tsp
- Turmeric powder-1/4 tsp
- Coriander powder- 1 Tsp
- black pepper powder-1/4 tsp
- Garam masala powder-1/2 tsp
- Fennel powder-1/4 Tsp
- Salt to taste
- Oil- 2 Tablespoon.
Method of preparation:
- Wash and clean squid. Slice into rings. Keep it aside.
- Heat oil in a pan. Saute ginger and garlic, green chilies, & curry leaves for few seconds. Now add sliced onions & saute till it becomes translucent. Add salt to it. Add in all spice powders except garam masala powder black pepper powder.
- Add chopped tomato. Stir for a minute.
- Add the squid and combine well.
- Add in garam Masala powder and black pepper powder. Mix well.
- Cover with a lid and cook on a low heat for 10 minutes.
- Once it is cooked open the lid and roast for few more minutes until it turns dry. Sprinkle few curry leaves and remove from heat.
- Serve hot with rice or chappathi.
