Ingredients for making this mutton curry are :
To cook mutton-
- Mutton- 500 gms.
- Turmeric powder-1/4 Teaspoon.
- Red Chili powder-1/2 Teaspoon.
- Ginger and garlic-1/2 Teaspoon, crushed
- Water- about 1/2 cup.
- Salt to taste.
For the gravy-
- Coconut oil-2 Tablespoons.
- Cardamom-3 Numbers.
- Cloves-4 Numbers.
- Cinnamon stick-1 small piece
- Black pepper-1/2 teaspoon.
- Coconut-1 Cup,shredded.
- Ginger and garlic-1/2 Teaspoon, crushed
- Onion-1 small(1/4 cup,chopped)
- Green chilly-2 numbers, slitted
- Curry leaves- few.
- Turmeric powder-1/4 Teaspoon.
- Coriander powder-2 teaspoons.
- Red Chili powder-1/2 Teaspoon
- Tomato-1 small tomato, chopped.
- Garam masala powder-1/2 Teaspoon.
- Salt to taste.
Method of preparation:
- In a pressure cooker add cleaned mutton/lamb pieces along with turmeric powder, red chilli powder, ginger garlic, salt and little water. Pressure cook this for 4 to 5 whistles.
- Heat a pan with a tablespoon of coconut oil. Add cardamom, cloves, black pepper and cinnamon stick. Saute this in oil for a few seconds.
- Add shredded coconut and roast until golden brown. Remove from the heat and let it cool down.
- Grind this by adding little water till it becomes a smooth paste.
- Heat a large pan with coconut oil. Add ginger garlic and chopped onion. Saute well.
- Add green chillies and curry leaves. Saute this for few seconds. Add salt to taste.
- Now add in all spice powders except garam masala powder.
- Saute them for few minutes in low flame.
- Now add chopped tomato and cook them well.
- Add in cooked mutton along with any water leftover.cover and cook them for 5 minutes. Add garam masala powder and mix it well.
- Mutton curry is ready.. Garnish with curry leaves and enjoy...
