Kerala Plum Cake or Christmas Fruit Cake Recipe – a delicious and easy step by step recipe for fruit cake or Kerala plum cake, that’s perfect for Christmas or really, all year round.



INGREDIENTS FOR PLUM CAKE :
  • All Purpose Flour / Maida: 1 Cup + 2 tbsp for tossing the soaked fruits
  • Butter/oil: 2/3 cup (Softened or melted)at room temperature
  • Powdered Sugar: 1/2 cup
  • Baking Powder: 2 Tsp
  • Baking Soda: 1 Tsp
  • Vanilla Extract: 1 Tsp
  • Eggs : 3 nos at room temperature
  • Orange juice:1 Cup.
  • Orange zest:1 Tsp.
  • Tutti Frutti-1/4 cup
  • Black raisins-¼ cup
  • Golden Raisins: ¼ cup
  • Cashew nuts: ¼ cup (chopped)
  • Almonds:¼ cup (chopped)
  • Dates: ¼ cup (chopped)
FOR THE CARAMEL:
  • Granulated Sugar: 1/2 cup
  • Water: 1/4 cup
FOR THE SPICE POWDER:
  • Cinnamon Stick: 1″ inch.
  • Clove : 3 no.s
  • Cardamom : 3 or 4 no.
  • Nutmeg: small piece.
  • Dry ginger-1/2" piece.


METHOD OF PREPARATION:
  1. In a bowl take all the dry fruits(of your choice)except cashew nuts and almonds... Pour a cup of orange juice and soak these fruits for at least 2 hours.
  2. Drain the orange juice. Add 2 tablespoon of flour to the dry fruits and toss it well.
  3. Grind cinnamon, clove, cardamom, nutmeg and dry ginger to make a fine powder. Keep this aside for later use.
  4. In a heavy-bottomed pan heat sugar and allow to caramelize. Once it turns a dark golden color turn off the flame and adds hot water. Be careful while doing this process, water may splash.
  5. If the sugar will harden, turn the heat back and slowly heat the mixture.
  6. Allow to cool down this mixture completely.
  7. Sift together all-purpose flour, baking powder, baking soda, salt, and spice powder. Keep this aside.
  8. Now grease the 7" cake tin with some butter and place butter paper.
  9. Preheat the oven at 180-degree Celsius or preheat your cooker at a medium-high flame.
  10. In a large bowl add butter and powdered sugar. Beat the butter and sugar for 3-4 minutes.
  11. Add in vanilla extract and mix well. Add in eggs to the mixture(one egg at a time ) and beat well.
  12. Add in orange zest and half of the flour mix and fold gently to mix the flour.
  13. Add in dry fruits, cashew nuts, and almonds and fold it gently. Add prepared caramel syrup and mix well.
  14. Pour the cake batter to the prepared cake tin and tap to remove air bubbles.
  15. Bake in preheated oven for 40-50  minutes or till the toothpick inserted comes out clean.
  16. Invert the cake to a cooling rack and let it cool completely.

Typically these are not frosted so just dust the plum cake with icing sugar when the cake is completely cooled and store in airtight containers in room temperature for up to three days.
