Royal Falooda | Fruit falooda ice cream recipe

 Royal Falooda is very easy to make and delicious dessert loved by everyone.
Falooda is a popular dessert and it has many versions. The main ingredients for falooda are sabja seeds, fine vermicelli, jelly, chilled rose milk, rose essence and ice cream. The main difference between falooda and royal falooda is the addition of fruits and nuts in royal falooda which is usually served at restaurants. Normally sabja seeds soak in normal water here I soaked in milk and add little vanilla and sugar. It makes the falooda yummier. Do try this way and give feedbacks.

Ingredients for preparing royal falooda are :
Jelly preparation :
Strawberry jelly powder - 1 Sachet (85 gms)
Hot water-1 cup.
Cold water -1 cup.
Preparation of Falooda Sev :
Falooda sev /falooda vermicelli.-1 Cup, (broken)
Water- 2 cups.
Sugar-3 Tablespoons.
Pistachio essence- few drops.
Mango essence-few drops.
Preparation of rose milk :
Milk- 1 Cup (Boiled and chilled)
Rose syrup-2 tablespoons.
For soaking sabja seeds:
Sabja seeds/basil seeds/tukmaria-2 tablespoons.
cold milk-1/2 cup.
Vanilla essence-1/2 teaspoon.
Sugar-1 Tablespoons.
Mixed nuts chopped-1/2 cup (Cashew nuts, pistachios and almonds)
Dry fruits- 1/2 cup (dates chopped, black and golden raisins.)
Mixed fruits- chopped(1 Cup)

Method of preparation:

  1. Mix strawberry jelly powder with a cup of boiled water until all the crystals dissolve.
  2. Refrigerate the jelly mix until set. It may take 3 to 4 hours to set completely.
  3. Boil 2 cups of water in a saucepan. Add broken falooda sev and add sugar to it. Cook them until falooda is done.
  4. Let it cool down to room temperature. Divide the falooda sev into two different bowls.
  5. Add pistachio essence to one bowl and mix it well. It will give a green colour to the sev.
  6. In the other bowl add mango essence and mix well. It will give a yellow colour to the vermicelli.
  7. Keep it in the refrigerator for 2 hours.
  8. Take chilled milk in a cup and add rose syrup to it.Mix well. Rose milk is ready. If you dont have rose syrup you can use rose essence + red food colour +sugar.
  9. Next step is to soak sabja/basil seeds. Take sabja seeds in a bowl and add cold milk to it and mix well. Add vanilla essence and sugar to it. It gives a lovely flavour.
  10. Assembling of falooda :
  11. Take a tall glass and pour rose syrup at the sides of the glass. Add 2 teaspoons of soaked sabja seeds then a tablespoon of green colour(Pistachio flavoured) falooda sev. Add a tablespoon of chopped fruits. You can use any fruits of your choice. Here I have  used pomegranate, strawberries and apple mixed with a tablespoon of sugar
  12. Next, add about 3 tablespoons of rose milk. Add a tablespoon of yellow colour(Mango flavoured) falooda sev to it.
  13. Add chopped nuts, strawberry jelly and dry fruits. You can layer it by your own choice.
