Amrutham podi Carrot Cupcakes Recipe | Nutrimix cupcakes.

The Amrutham Podi/ Nutrimix Powder is a health supplement provided by Kudumbasree that is aimed to satisfy the nutritional requirements of the children of Kerala(India) between the ages of six months and three years.

It operates under the Take Home Ration Strategy which is a feeding program through Anganwadis, and the Nutrimix is distributed in the form of Take-Home-Ration.
There are five major ingredients in the Amrutham Nutrimix: Wheat, Groundnut, Soybean, Gram Dal and sugar/jaggery.
 Today I am gonna share a simple recipe with amrutham powder.

Ingredients for making carrot cupcakes are:

  1. Nutrimix powder- 1 1/2 Cup.
  2. Cinnamon powder-1/2 Teaspoon.
  3. Baking Powder-1 1/2Teaspoon.
  4. Butter- 1/2 Cup, Melted and at room temperature.
  5. Sugar-1/2 Cup, Powdered.
  6. Eggs-3 numbers at room temperature.
  7. Vanilla essence-1 Teaspoon.
  8. Milk-1/3 Cup.
  9. Carrot -1 Cup,grated.
  10. Raisins-1/4 Cup.

Method of preparation:

  1. Sift the nutrimix powder with cinnamon powder and baking powder. Keep that aside.
  2. Preheat a pan with a cup of salt and place a stand over a medium flame for 10 minutes.(Without oven) 
  3. If you are using an oven.Preheat oven for 180-degree Celsius for 10 minutes.
  4. In a large mixing bowl mix powdered sugar and butter. To that add 3 eggs one at a time. Beat well using a hand whisk or beater. add milk and vanilla essence. Add half of the flour mix and fold well. Add remaining flour mixture and again mix well. Add grated carrot and raisins and combine well.
  5. Transfer the batter to cupcake molds and bake for 30 minutes at 18o dc preheated oven.
  6. or bake for 35 minutes in a preheated pan over a very low flame. ( Time may vary)
  7. Check with a toothpick which should come out clean.

Delicious cupcakes are ready..
