Ingredients for making this spicy curry are :
To marinate chicken:
- Chicken: 1 kg
- Turmeric powder: 1/4 Teaspoon.
- Garam masala powder: 1/4 Teaspoon.
- Red chili powder: 1 heaped teaspoon.
- Lemon juice: 1 Tablespoon.
- Ginger garlic paste:1 Teaspoon.
- Salt to taste.
- Coconut (scrapped): 1/2 Cup.
- Black pepper:1/2 Teaspoon.
- Fennel seeds:1/2 Teaspoon.
- Cumin seeds:1/2 Teaspoon.
- Cardamom:3 or 4 numbers.
- Cinnamon stick: 1inch stick.
- Black cardamom:1 Number.
- Nutmeg:1 small piece.
- Mace:1 small piece.
- Sesame seeds:1 tablespoon.
- Poppy seeds:1 tablespoon.
- Dried red chili: 8 to 10 numbers.
- Coriander seeds:1/2 Cup.
- Fenugreek seeds:1/8 Teaspoon.
To prepare gravy :
- Oil:3 Tablespoons.
- Onion:2 Large, finely chopped.
- Ginger garlic paste:1 Tablespoon.
- Red chili powder:1 Teaspoon.
- Tomato:2 tomatoes, finely chopped.
- Coriander leaves: few, finely chopped.
Method of preparation:
- Marinate the chicken with the salt and allspice powders under "To marinate chicken"
- Keep the chicken as marinated for 30 minutes.
- Heat a pan and add scraped coconut. Roast it until it becomes golden color and aromatic.
- Add all whole spices under "To roast".Roast them for few minutes or until the coconut becomes golden brown color. Add sesame seeds and poppy seeds. roast for few seconds. Remove from the pan and keep aside.
- In the same pan add dried red chillis and coriander seeds.
- Roast until it changes color. ( Add few fenugreek seeds too.) Remove from the pan and let it cool.
- Grind this spices to a smooth paste by adding little water or powder them in a mixer grinder.
- Heat oil in a large kadhai and add chopped onions. Saute them until it becomes nice golden brown.
- Add ginger garlic paste and saute for few minutes.
- To this add ground masala and a teaspoon of Kashmiri chili powder. Mix it well.
- Add finely chopped tomatoes and saute them well. Now add marinated chicken and coat the masalas well to the chicken.
- Cook them for few minutes by stirring with the masala. Now add a cup of water( or as needed)
- and mix well. Check the salt and adjust it. Add more salt if needed. Add a handful of chopped tomato.
- Cover and cook for 20 minutes on medium flame or until the chicken becomes tender and cooked well.
