 This egg fried rice recipe is easy and delicious, perfect for a quick lunch or dinner. Egg fried rice. Deceptively simple, but a huge favorite and crowd-pleaser. My egg fried rice recipe uses an egg that’s lightly flavored with turmeric, garam masala, and red chili powder, which I think is a unique addition. It adds color to the dish, making it a vibrant yellow.
Of course, like most fried rice recipes, this egg fried rice is best served with copious amounts of hot sauce. Give it a try; it’s very easy to make at home, and you can find all of the ingredients at any grocery store.

Ingredients for making this yummy pulao:

  1. Oil-2 tablespoons.
  2. Ginger garlic paste-1 teaspoon.
  3. Curry leaves-few.
  4. Onion-1/4 Cup, Sliced.
  5. Capsicum-1/4 cup, chopped.
  6. Egg-2 numbers.
  7. Turmeric Powder-A pinch.
  8. Red Chilli Powder-1/2 Teaspoon.
  9. Cooked Rice-2 cups, Cooled.
  10. Garam Masala Powder-1/2 Teaspoon.
  11. Coriander leaves-few, chopped.
  12. Salt-to taste.

Method of preparation :
  1. Heat a pan with some oil. When the oil is heated add a teaspoon of ginger garlic paste and saute for few seconds. Saute onions until soft and translucent. Add a few curry leaves and salt to taste. 
  2. Now add chopped capsicum and saute well. You can add chopped veggies to this. 
  3. Add 2 eggs and scramble them. Add a pinch of turmeric powder and half a teaspoon of red chili powder or according to your spice level.
  4. Mix cooked and cooled basmati rice to this masala. Add half a teaspoon of garam masala powder and mix well until combined.
  5. Adjust salt to taste. Finally, add a handful of chopped coriander leaves and serve.
