This vegan south Indian tomato chutney is easy to make with basic pantry ingredients
Ingredients for tomato chutney :
- Coconut oil-1 tablespoon.+1 tablespoon.
- Shallots-2 tablespoons, chopped.
- Dried red chillies-2 or 3.
- Tomato-1 large tomato, chopped.
- Mustard seeds-1/4 teaspoon.
- Curry leaves-few.
- Salt to taste.
Method of preparation:
- Heat oil in a pan and add chopped shallots and dried red chillies. Saute until the shallots become translucent. Add chopped tomato to this and salt to taste. Saute the tomatoes until soft and mushy.
- Turn off the heat.
- and let it cools down slightly. Grind this to a smooth paste. Transfer to a bowl.
- Heat a tablespoon of oil in a pan and splutter mustard seeds. Add a few curry leaves and remove from heat. Pour this over the chutney and serve.
