Beef Cup cake | Meat loaf muffins

Hey, there today I am here with a perfect keto appetizer which can be served as lunch or as a snack. I am sure you will definitely love this low carb meal.
These Keto Meatloaf Muffins are basically perfectly portioned low carb meatloaf, ideal for Keto meal prep lunches.

Ingredients for making these keto muffins are:
  1. Minced meat ( Beef )- 400 gms.
  2. Coconut oil-2 Tablespoons.
  3. Ginger garlic paste- 1 teaspoon.
  4. Green chillies- 2 Numbers, chopped.
  5. Onion-1/4 Cup, finely chopped.
  6. Turmeric powder-1/2 Teaspoon.
  7. Red chilli powder- 1 Teaspoon.
  8. Tomato-1 medium-sized, chopped.
  9. Coriander leaves and curry leaves - few chopped.
  10. Garam masala powder - 1 teaspoon.
  11. Black pepper powder- 1/2 Teaspoon.
  12. Egg- 3 numbers.
  13. Mozzarella cheese- grated,1/2 cup.
Method of preparation:
  1. Heat a pan with coconut oil. Once the oil is heated add ginger garlic paste, green chillies and onion. Saute them until the onion becomes soft.
  2. Add the spice powders and saute until the raw smell goes.
  3. Add the minced beef and cook the meat until it is completely cooked.
  4. Once the beef cooked completely then add chopped tomato and coriander leaves. Mix them well and cook for few minutes until the tomatoes cooked well. Let them cool down to the room temperature.
  5. Preheat the oven at 180 degrees/ 350  F.
  6. In a bowl beat three eggs along with a pinch of salt. 
  7. Add the beaten eggs to the masala which we prepared. Mix well until combined.
  8. Fill the batter in the cupcake molds( I used silicone molds). Fill half of the mold and spread little mozzarella cheese then fill them full. Also, spread the grated mozzarella at the top.
  9. Bake them for 15 to 20 minutes in the preheated oven.
