Plum Cake Cookies | Fruit Cake Cookies | Christmas special cake cookies

Hi, there today I am sharing a unique cake cookies recipe. Plum cake season is here advance merry Christmas to all my friends and subscribers.

This is a special cookie with the exact flavor of plum cake. The combination of dry fruits and the yummy plum cake flavor of spices make this cookie more rich and delicious.
These are actually fruitcake cookies from somewhere in the 1970s

Ingredients required for making these cookies are:
for soaking:
  1. Orange Juice-1/2 Cup.
  2. Black raisins-2 Tablespoons.
  3. Golden raisins-2 Tablespoons.
  4. Dates-2 Tablespoon.deseeded and chopped.

for the cookie dough:
  1. All-purpose flour-2 Cups,300 gms.
  2. Baking powder-1 Teaspoon.
  3. Baking soda-1/4 Teaspoon.
  4. Salt-1/4 Teaspoon.
  5. Butter-unsalted,125 gms, at room temperature(softened)
  6. Sugar-3/4 cup, granulated sugar.
  7. Eggs-2 numbers at room temperature.
  8. Plum cake essence /vanilla esssence -1/2 Tablespoon.
  9. Cinnamon powder-1/4 Teaspoon.
  10. Dry ginger powder-1/4 Teaspoon.

Method of preparation:
  1. Soak the dry fruits in the orange juice for at least 4 to 8 hours in the refrigerator.
  2. Drain the excess orange juice and set aside.
  3. Mix the flour with baking powder baking soda and salt. Keep this aside.
  4. Add 2 tablespoon of flour to the strained fruits and coat well and set aside.
  5. In a large bowl take softened butter and granulated sugar. Beat well using a hand blender.
  6. Add 2 eggs and mix until smooth and creamy.
  7. Add plum cake essence or vanilla for the flavor. Add spice powders(cinnamon and ginger ) and mix all well.
  8. Now add the flour mix and mix well with a rubber spatula. Add the dry fruits to this and combine well.
  9. cookie dough is now ready.
  10. Preheat the oven at 170-degree Celcius. Prepare the baking tray and line with butter paper. Scoop 1 tablespoon of dough and place it on the baking tray. keep space between each of them (2 inches)
  11. Bake in the preheated oven for 10-15 minutes at 170-degree Celcius.
  12. Dust some icing sugar on top and enjoy...
