Plum cake | Non alcoholic Fruit cake recipe | Instant plum cake without soaking

 Christmas Fruit Cake Recipe – a delicious and easy step by step recipe for fruit cake or 
 plum cake, that’s perfect for Christmas or really, all year round.


  1. All-Purpose Flour / Maida- 1 ½ Cups 
  2. Oil-  cup 
  3. Sugar- ½ cup
  4. Baking Powder-1 Teaspoon
  5. Salt-¼ Teaspoon
  6. Plum cake essence /Vanilla Extract-1 Tsp
  7. Eggs : 3 nos at room temperature
  8. Orange zest:1 Tsp.
  9. Black raisins-¼ cup
  10. Golden Raisins: ¼ cup
  11. Cashew nuts: ¼ cup (chopped)
  12. Almonds:¼ cup (chopped)
  13. Dates: ½ cup (chopped)
For the caramel:
  1. Granulated Sugar: ½ cup
  2. Water: ½ cup
For the spice powder:
  1. Cinnamon Stick: 1″ inch.
  2. Clove : 3 no.s
  3. Cardamom : 3 no.s
  4. Nutmeg: small piece.
  5. Dry ginger-½ " piece.
  1. In a heavy-bottomed pan heat sugar and allow to caramelize. Once it turns a dark golden color turn off the flame and adds hot water. Be careful while doing this process, water may splash.
  2. If the sugar will harden, turn the heat back and slowly heat the mixture.
  3. Add chopped dates, black raisins, and golden raisins. Mix well. Remove from the heat.
  4. Drain the sugar syrup and let it cool. Add 2 tablespoon of flour to the dry fruits and toss it well. keep aside.
  5. Grind cinnamon, clove, cardamom, nutmeg and dry ginger to make a fine powder. Keep this aside for later use.
  6. Sift together all-purpose flour, salt, and spice powder. Keep this aside.
  7. Grease the tin (rectangular tin 10"x4.3''x2.8'') with oil or butter. Then line with a parchment/butter paper.
  8. Preheat the oven at 180-degree Celsius.
  9. In a large bowl add powdered sugar. Add in eggs to the mixture(one egg at a time ) and beat well.
  10. Add in vanilla extract/plum cake essence and oil .mix well.
  11.  Add in orange zest and half of the flour mix and fold gently to mix the flour.
  12. Add prepared caramel syrup and mix well.
  13. Add in dry fruits, cashew nuts, and almonds and fold it gently. 
  14. Pour the cake batter to the prepared cake tin and tap to remove air bubbles.
  15. Bake in preheated oven at 160 degree celcius for 50-60  minutes or till the toothpick inserted comes out clean.
  16. Invert the cake to a cooling rack and let it cool completely.

Typically these are not frosted so just dust the plum cake with icing sugar when the cake is completely cooled and store in airtight containers in room temperature for up to three days.
