Carrot pudding is the most common simple, easy and quick dessert. Agar-Agar known as China grass in India is dried crispy vegetable gelatin used for making pudding, jelly, and custards. China grass pudding has a glossy appearance and feels like jelly. China grass is prepared by adding melted agar-agar mixture in boiled sweet milk then allowing it to set and then served after refrigerating.

Ingredients required in this recipe are:
- Carrots-250 gm ( 2 large)
- Milk-2 cups.
- China grass/ agar agar - 10 -12 gms.
- Sugar-1/2 Cup.
- Vanilla essence-1/2 Tablespoon.
- Water- 1 1/2 cups.
- Grated carrot and chopped nuts for garnishing.
- Honey- 1 to 2 teaspoon(optional)
- Soak the china grass in 1cup of water for 15 minutes.
- In a pan boil grated carrots with a cup of water until the carrot is cooked well.
- Drain the water and allow it in to cool; blend well with 2 cups of milk.
- In another pan boil the soaked china grass with soaked water until it melts completely.
- Add ground carrot milk mixture to the china grass and mix well.
- Add sugar, stir well for 2 minutes on low flame until milk get boiled.
- Stir well for two minutes and switch off the flame. Let it cool a bit.
- Transfer it into a mold or serving dish. Refrigerate it for at least 2-3 hours.
- Unmold from the mold and garnish with grated carrots and chopped nuts.
- Drizzle a teaspoon of honey and serve immediately.
