Aval Vilayichath | Sweetened roasted Rice Flakes

A Kerala favorite, aval vilayichathu is more of a teatime snack than a dessert. Puffed rice infused with jaggery, grated coconut and cardamom evoke nostalgia!... This is my mom's special recipe..

Ingredients needed :
  1. Aval (brown or white rice flakes): 500 gms
  2. Jaggery:750 gms.
  3. Water: 1/2 to 1 cup.
  4. Cardamom: 4 or 5,crushed.
  5. Roasted Jeera powder: 1/2 tsp.
  6. Cashew nuts:1/3 cup
  7. Golden raisins:1/3 cup
  8. Roasted gram(pottukadala)-1/2 cup
  9. Coconut: 1 whole coconut scraped.
  10. Ghee-2 tbsp.
Method of preparation:
  1.  Slightly roast the rice flakes on medium heat and keep aside.
  2. Fry cashews, raisins and roasted gram in ghee and keep this aside.
  3. Heat water and add jaggery (if jaggery is not clean you have to strain it once it is melted). After jaggery is melted allow it to simmer for some time till getting a one string consistency (thread-like).
  4. Then add the fresh coconut...
  5. Mix well and allow it to simmer for another 3 or 4 minutes so that the moisture in the fresh coconut will be absorbed.
  6. Add cardamom and jeera powder and mix well. Turn off the flame.
  7. Add the roasted rice flakes into this.
  8. Mix well. Add fried nuts and raisins and again mix well. When it is completely cooled, Serve with tea. It is delicious.
