Pulao is a rice-based recipe which frequently includes ingredients like veggies and/ or meat. Long-grained rice versions like Basmati can be used to make Pulaos. Occasionally the rice along with other ingredients are prepared collectively in spices and broth, although maybe the rice is parboiled and also the plant and/ or meat are cooked in the spices and the rice is then included and stir-fried together.
Today we are sharing a vermicelli version of chicken pulao or biriyani.

To marinate chicken:
- Chicken-200 gms.(Boneless.)
- Turmeric powder-1/4 Teaspoon.
- Red chilli powder-1/2 Teaspoon.
- Salt to taste.
- Roasted vermicelli-1 1/2 cup.
- Ghee-1 Tablespoon.
- Bay leaf- 1 number.
- Cloves-2 to 3 numbers.
- Cinnamon stuck-1 ' piece.
- Cardamom-3 numbers.
- Onion-1/2 Cup, chopped.
- Ginger and garlic-1/2 teaspoon, crushed.
- Curry leaves-few
- Green chilly-1 slit.
- Turmeric powder-1/4 teaspoon.
- Red chili powder-1/2 Teaspoon.
- Garam masala powder-1/2 Teaspoon.
- Tomato-1 small, chopped.
- Mixed veggies-1/2 Cup.
- Water-1 cup or as needed according to the size of vermicelli.
- Lemon juice-juice of 1/2 Lemon.
- Coriander leaves- few.
- Fried Cashew and raisins as needed.
- Salt to taste.
Method of preparation:
- Marinate the chicken pieces with salt turmeric powder, red chilli powder and ginger garlic paste. Set aside for 15 minutes.
- In a large pan heat a tablespoon of ghee. Add cloves, cinnamon stick, cardamom and bay leaf. Saute for a few seconds.
- Add chopped onions,ginger-garlic, salt to taste, green chili, curry leaves and saute them well until the onion becomes translucent.
- Add marinated chicken, mixed veggies, chopped tomato and mix very well.
- Add in turmeric powder, red chili powder and garam masala powder. Mix this well until they are incorporated. Cover and cook the chicken for 5 minutes on medium flame.
- Add water enough to cook the vermicelli and lemon juice. cover and allow this to boil.
- Add the broken roasted vermicelli and mix well.
- Cook the vermicelli with the lid on. Once it is done mix well and let the water dries up completely.
- add few chopped coriander and fried cashews and raisins. Let it rest for 5 minutes and serve.
Notes:
- You can also make this without chicken.
- According to the size of the vermicelli, the cooking time and amount of water may differ.
- If you don't get the roasted vermicelli, first you have to roast the vermicelli with a teaspoon of ghee.
