Carrot Kheer is a healthy and delicious dessert. Which can be easily prepared with few ingredients. Most of the people who don't like the taste of carrot when it is cooked they will like this yummy kheer. Kheer is a milk pudding flavored with cardamom, raisins, saffron, cashews, pistachios, almonds, or other dry fruits and nuts. This Carrot Sabudana Kheer - Carrot Sago Kheer is a twist to the traditional sabudana kheer. The addition of grated carrot (gajar) gives a beautiful color and a healthy touch to this kheer.
 Kheer is an Indian style eggless milk pudding. This is a sweet dish (dessert) originating from the Indian subcontinent. Kheer is a milk pudding flavored with cardamom, raisins, saffron, cashews, pistachios, almonds, or other dry fruits and nuts. Kheer recipe is generally cooked by boiling with milk, sugar, nuts, cardamom and any one of the following: rice (chawal), broken wheat (dalia), tapioca (sabudana), vermicelli (sevaiyaan), bottle gourd (lauki), pumpkin (kaddu) sweet corn (makki).

Actually, I don't like the cooked taste of carrot, but when I try this payasam I love it.
Let us get started...
Ingredients we need in this recipe are:

  1. Carrot/Gajar -1 medium sized( finely grated)
  2. Milk-2 cups.
  3. Sago seeds-1/4 cup (Sabu dana/Chavvari in malayalam)
  4. Milk Powder-1/2 Cup.
  5. Sugar-4 tablespoons or to taste.
  6. Cashew nuts and raisins- ( as needed)
  7. Ghee-2 tablespoons.
  8. Cardamom - 3 numbers.
  9. Carrot Payasam
  10. Water as required(about 1 1/2 cup)

Method of preparation:

  1. Soak Sago seeds in half a cup of water for an hour.
  2. Once it has been soaked add to a saucepan along with a cup of water.
  3. Boil and cook the sago seeds by continuously stirring. Once it is cooked you can see it become transparent. Keep that aside.
  4. Take a large heavy-bottomed pan and add ghee. Fry cashews and raisins until it gets a golden color.
  5. Remove from the ghee and keep aside.
  6. Add grated carrots and saute for a minute. It will change the color and lightly fried.
  7. Add milk powder and cardamom to this and mix well.
  8. Now add milk and cooked sago seeds. Cover and let it boil.
  9. Once the milk gets boiled it is ready. Add fried cashews and raisins and mix well..

Yummy carrot payasam is ready. Serve hot 😋
