Bitter gourd Pickle | Kerala Style Paavakka achaar recipe


Today's recipe is a pickle made with bitter gourd. Sounds weird?? Bitter gourd when pickled, the bitterness is generally reduced with the addition of vinegar and adds a nice tangy flavor.
This is an easy recipe for Kerala style bitter gourd pickle.

Ingredients required in this recipe are:
  1. Bitter gourd / Paavakka - 3 medium sized.
  2. Turmeric powder-1/4 teaspoon.
  3. Salt -1 teaspoon.
  4. Sunflower oil or veg oil- for frying the bitter gourd.
  5. Gingelly oil-3 tablespoons.
  6. Mustard seeds- 1/4 teaspoon.
  7. Fenugreek seeds-1/4 teaspoon.
  8. Curry leaves- as needed.
  9. Green chilies- 4 to 5 numbers.
  10. Garlic- 15 to 20 numbers(large cloves sliced into small)
  11. Ginger- 2-inch piece, chopped(cut in lengthwise)
  12. Turmeric powder- 1/2 Teaspoon.
  13. Kashmiri Red Chilli powder- 2- 3 tablespoons.
  14. Asafoetida powder-1/4 teaspoon.
  15. Vinegar-3/4 cup
  16. Salt to taste.

Method of preparation:

  1. Wash and chop the bitter gourd in slightly thin slices(Lengthwise). Apply salt and turmeric and keep this aside for at least 30 minutes. Squeeze the bitter gourd and discard the juice.
  2. Heat a pan with oil for frying the bitter gourd. Fry them until cooked and slightly golden brown.
  3. Remove from oil and drain on to a paper towel.
  4. Heat a pan with 3-4 tablespoons of gingelly oil. Add mustard seeds and let it crack. Add in fenugreek seeds, chopped green chillies, curry leaves , garlic and ginger. Saute them for 2 -3 minutes or the garlic and ginger become a slight golden colour.
  5. Turn the heat to very low and add turmeric powder, red chilli powder, asafoetida powder and mix well. Add in salt and vinegar. Let the vinegar to boil and turn off the heat. Add in fried bitter gourd and mix it well.
  6. Allow to cool this completely and transfer this to a clean airtight jar.
Always serve with a dry spoon.
