Chatti Pathiri | Malabar Chicken Snack Recipe



Chatti pathiri also known as chatti pathal is a traditional dish made by Malabar Muslims during iftar( the time they breakfast in the month of Ramzan).
Chatti Pathiri Recipe / Adukku Pathiri /ചട്ടി പത്തിരി Adukku Pathiri Recipe Chatti Pathiri is a layered pastry made in the North Malabar and Malabar region of Kerala.
It is made in both sweet and savory variations. The dish is very similar to the Italian lasagna. Instead of pasta; pastry sheets/pancakes made with flour, egg, and water are used. The filling depends on the variation desired. The sweet ones are made with sweetened beaten eggs, nuts, and raisins, seasoned with cardamom. The savory ones are made with traditional meat filling used in making.

Ingredients required in this recipe are :
For making layered crepes:
  • Maida - 2 Cups.
  • Salt to taste
  • Water as required
  • Oil - 1 Teaspoon.
For marinating chicken:
  • Chicken - 500 gms, Boneless chicken.
  • Turmeric Powder- 1/4 Teaspoon.
  • Garam Masala -1/4 Teaspoon.
  • Black Pepper powder - 1/4 Teaspoon.
  • Salt to taste.
For Chicken fillings:
  • Onion - 2 no (medium-chopped)
  • Ginger - garlic paste - 1 tablespoon.
  • Green chili - 2 numbers (chopped)
  • Curry leaves -1 string, Chopped.
  • Turmeric powder- 1 /4 Teaspoon.
  • Red chili powder - 1Teaspoon.
  • Garam masala - 1/2Teaspoon.
  • Black Pepper powder - 1/4 Teaspoon.
  • Coriander leaves
  • Salt to taste
  • Oil-2tsp
Other ingredients:
  • Oil - 2tsp
  • Flour to sprinkle.
  • Egg-4 nos
  • Milk-1/4 Cup.
  • Black pepper powder-1/4 teaspoon.
  • Salt to taste.

Method of preparation:
  1. Marinate the chicken with ingredients under marination. Cook the chicken in a pressure cooker until soft. Shred the chicken with your hands or with a fork and knife.
  2. Take a bowl put maida, salt, and enough water and mix it well.
  3.  Knead it into a nice smooth dough just like paratha dough.
  4. Grease with oil and close the bowl for 10-15 mins.
  5. After 10-15 mins, knead for 2 minutes and roll out lemon size ball from the dough.
  6. Roll it each maida balls on rolling board by patting maida into small chappathi. Repeat for 3 to 4 balls. Grease one small chapati with flour and sprinkle little flour.
    Place other rolled chappathi over it. Repeat this for making 3 or 4 layers. Roll them to wide thin chapati ( size of chapati depends upon the width of pan you are going to prepare chattipathiri.
  7. Take a pan heat it put made chapatis into it just cook it for 30 seconds then flip the other side cook Same as above and transfer to a plate.
  8. Do this for all rolled chappathis. Remove from the heat and  Separate each layer of chappathis. Keep that aside.
  9. Heat a nonstick pan with oil. Once the oil is heated, add ginger garlic, green chillies, curry leaves and saute it for few seconds.
  10. Into this add chopped onion and salt. Saute until the onion becomes translucent.
  11. Add in turmeric powder, red chilli powder,garam masala powder and black pepper powder. Saute for few seconds until the raw smell of the spices goes.
  12. Add in cooked and shredded chicken to this and mix well until combined. Also, you can add chopped coriander leaves and mix well. Remove this from heat and let it cool down.
  13.  Take a bowl break 4 eggs into it add salt , black pepper powder and mix well. Keep it aside.
  14. Take a wide heavy-bottomed pan and grease with ghee.
  15. Take a maida chapati and dip into the egg mixture and place the first layer inside the pan.
  16. the second layer spread some chicken masala. Again take another maida chapati dip into egg mixture place it as the third layer.
  17. This process will continue till all layers of maida chapati and masalas will finish.
  18. t the top of the last layer pour balance egg mixture eventually at the sides of chatipathiri.
  19. Place this pan on top of another tawa and turn on the heat. Close the lid and cook it for 15-25 mins.
  20.  After 15-25 mins you can see sides of chatipathiri will separate from the pan .
  21. .Flip the whole chatipathiri carefully using a plate and spatula . Or flip them to another Tawa and Close the lid and cook it for another 10 mins in very low flame.

Take out lid and place it in a serving plate cut it and serve hot…
