Egg Malai Masala is an extremely creamy & yummy recipe of Egg in gravy. All the ingredients are very common and very similar to a normal egg curry with the exception of Milk & Cream. Although it is a spicy gravy, it doesn’t include Indian spices like Red Chili powder or Turmeric powder, leaving an off-white creamy texture on the gravy. Ingredients required in this recipe are :
- Boiled egg - 4 numbers.
- Onion- 3 medium-sized, roughly chopped.
- Green Chillies - 2 to 3 numbers.
- Garlic cloves- 3 numbers.
- Ginger- 2 small pieces.
- Cumin Powder- 1/2 Teaspoon.
- Garam Masala powder- 1 teaspoon.
- Black pepper powder- 1/2 Teaspoon.
- Milk- 1 cup.
- Cream- 2 to 3 tablespoons.
- Coriander leaves - a handful, chopped.
- Salt to taste.
- Water as needed.
- Ghee or butter- 1 tablespoon.
- Roughly chop 3 large Onions, 2 Green Chilies, garlic cloves, and ginger. Add them to a grinder jar & grind them to a smooth paste. Add little water if needed.
- Heat a large pan and add ghee. Once the ghee is heated add ground onion paste.
- Mix well. Let it cook for about 10 minutes or until the raw smell goes away.
- Add ½ teaspoon Cumin powder, ½ teaspoon Black Pepper powder, 1 teaspoon Garam Masala powder.
- Saute until the raw smell goes.
- Add the boiled eggs & then gently coat the eggs with the paste.
- Cover it with the lid and let it cook for about 2 minutes. After 2 minutes add cream and gently mix. Add a handful of Coriander Leaves & mix well.
- Egg Malai Masala should now be ready.
