Egg Malai Curry ~ Creamy delicious egg malai Masala



Egg Malai Masala is an extremely creamy & yummy recipe of Egg in gravy. All the ingredients are very common and very similar to a normal egg curry with the exception of Milk & Cream. Although it is a spicy gravy, it doesn’t include Indian spices like Red Chili powder or Turmeric powder, leaving an off-white creamy texture on the gravy. Ingredients required in this recipe are :
  1. Boiled egg - 4 numbers.
  2. Onion- 3 medium-sized, roughly chopped.
  3. Green Chillies - 2 to 3 numbers.
  4. Garlic cloves- 3 numbers.
  5. Ginger- 2 small pieces.
  6. Cumin Powder- 1/2 Teaspoon.
  7. Garam Masala powder- 1 teaspoon.
  8. Black pepper powder- 1/2 Teaspoon.
  9. Milk- 1 cup.
  10. Cream- 2 to 3 tablespoons.
  11. Coriander leaves - a handful, chopped.
  12. Salt to taste.
  13. Water as needed.
  14. Ghee or butter- 1 tablespoon.
Method of preparation :
  1. Roughly chop 3 large Onions, 2 Green Chilies, garlic cloves, and ginger. Add them to a grinder jar & grind them to a smooth paste. Add little water if needed.
  2. Heat a large pan and add ghee. Once the ghee is heated add ground onion paste.
  3. Mix well. Let it cook for about 10 minutes or until the raw smell goes away.
  4. Add  ½ teaspoon Cumin powder, ½ teaspoon Black Pepper powder, 1 teaspoon Garam Masala powder.
  5. Saute until the raw smell goes.
  6.  Add the boiled eggs & then gently coat the eggs with the paste.
  7. Cover it with the lid and let it cook for about 2 minutes. After 2 minutes add cream and gently mix. Add a handful of Coriander Leaves & mix well.
  8. Egg Malai Masala should now be ready.
