Chicken Shawarma Recipe / Arabic Shawarma / Shawarma Sauce / Arabic Flat bread

 

Hey, there today I am sharing a yummy Shawarma Sandwich recipe which popular in middle eastern countries.  Tender chicken with juicy shawarma sauce makes this sandwich more special.  Let us get started...

Ingredients required in this recipe are:

For making kubbus/ flatbread-

Maida / all-purpose flour - 2 and a half cups.

Sugar - 1 tablespoon 

Salt - to taste.

Instant yeast - 1 teaspoon.

Lukewarm milk-1/2 cup.

Lukewarm water as needed.

Olive oil- 1 tablespoon.

For marinating chicken-

Chicken - boneless, 250 gms chopped.

Salt to taste

Lemon juice - 1 tablespoon. 

Garlic paste or powder 1 teaspoon.

Paprika powder- 1/2 teaspoon 

Black pepper powder - 1/2 teaspoon

Oregano  or mixed herbs - 1/2 teaspoon(optional)

Yoghurt - 1/4 cup.

For yoghurt sauce-

Yoghurt - 1/2 cup.

Garlic pods- 3 numbers.

Tahina paste -1/4 cup.

White vinegar- 1 tablespoon.

Salt to taste

Other ingredients -

Cucumber chopped - 1 cup

Tomato - chopped - 1 cup

Lettuce - chopped - 1 cup. 


Method of preparation :

  1. In a large mixing bowl add flour, sugar, salt, instant yeast. Mix it well and add in milk and water to make a smooth dough.  Knead the dough for 5 to 10 minutes to make it soft. Dough should be soft, not stiff. Cover and let it rest for 2 hours in a warm space. 
  2. Marinate the chicken with the ingredients under marination and keep it marinated for at least 30 minutes.  
  3. Fry or grill the chicken with a tablespoon of oil until well cooked and browned. Chop them into small pieces and keep aside. 
  4. To make yoghurt sauce blend all the ingredients such as yoghurt, garlic, tahini, salt and vinegar in a blender jar. Sauce become thick if you refrigerate.
  5. After 2 hours the dough will be rise.  Punch and knead again.  Divide the dough into 8 equal-sized balls. 
  6. Dust the chappathi board with some flour and roll out the dough balls into a slightly thick round disc. 
  7. Heat a non-stick Tawa and cook the bread for 30 seconds and flip it.  Again flip after you see bubbles.  Press with a spatula when it puffs up.  Once ready remove from pan and cover with a kitchen towel to keep it soft. 
  8. Mix chopped veggies with salt and black pepper.

Assembling :

  1. Place a kubbus above a sandwich paper or foil paper.  Spread some yoghurt sauce on top of it.  Put some veggies on top and then some chopped fried chicken pieces. Pour little sauce on top. You can add pickled veggies too.
  2. Tightly wrap them with the paper and serve.
