Ingredients required in this recipe are:
- 1 tbsp oil (olive oil)
- 2 onions, peeled and diced
- 1 tbsp garlic, minced
- 1 red bell pepper, seeded and chopped
- 3 Chopped Green chilies
- 2 large diced tomatoes/
- 1 tbsp tomato paste
- 1 tsp chili powder
- 1/4 tsp cumin
- 1/2 tsp black pepper powder
- Pinch of sugar (optional, to taste - omit for low carb)
- Salt and pepper, to taste
- 6 eggs
- 1/2 tbsp freshly chopped coriander leaves to garnish.
- Mozarella cheese for topping.
- Oregano or mixed herbs for topping,
Method of preparation:
- In a large frying pan add a tablespoon of oil and heat it over a medium flame.
- Add in minced garlic and saute for few seconds. Saute the onion, green chilies, and red bell pepper together.
- Once the onion gets translucent add in diced tomatoes and cooks for few minutes until they turn mushy.
- Add in salt, tomato paste, and other spice powders. Mix them well. Add little sugar to balance the taste.
- Lower the heat and make space for 6 eggs as shown in the video. Crack the eggs, one at a time, directly over the tomato mixture, making sure to space them evenly over the sauce. I usually place 5 eggs around the outer edge and 1 in the center.
- Cover the pan. Allow mixture to simmer for few minutes, or until the eggs are cooked and the sauce has slightly reduced. Keep an eye on the skillet to make sure that the sauce doesn't reduce too much, which can lead to burning.
- Finally season with some salt and pepper. Sprinkle chopped coriander leaves and oregano if you like.
