Ingredients required to make this brownie are :
  1. Semi-sweet dark Chocolate chunks- 200 gms(divide 170gm + 30 gm)
  2. Butter- 1/2 Cup,113 gms.
  3. Sugar-150 gms (3/4 cup)
  4. Eggs- 3 small eggs.
  5. Vanilla essence-1/2 Tablespoon.
  6. Salt-1/4 Teaspoon.
  7. Instant Coffee- 1 teaspoon.
  8. All-purpose flour-1/2 cup.
  9. Cocoa Powder-1/4 Cup.
Method of preparation :
  1. Preheat the oven @ 180-degree Celcius and Lightly grease a 7''x11'' or 9''x9'' square baking pan with cooking oil spray. Line with parchment paper (or baking paper); set aside.
  2. Boil water in a saucepan and place a heatproof bowl above it.
  3. Add chocolate chunks(170 gms) and butter to the bowl . Melt the chocolate and butter together using the double boiler method. Keep this aside and let it cool down to room temperature.
  4. Whisk the eggs and sugar together until creamy using a wire whisk or an electric beater.
  5. Add in vanilla, salt, and Instant coffee powder.
  6. Give them a good mix.
  7. Sift in the flour and cocoa powder Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so will affect the texture of your brownies). Add chocolate chunks and quick mix.
  8. Pour batter into prepared pan, smoothing the top out evenly. (OPTIONAL: Top with chocolate chunks or chocolate chips.)
  9. Bake for 30 minutes in the preheated oven.
  10. Remove and allow to cool to room temperature before slicing into square pieces.
Notes:
TIPS AND TRICKS:
1. Whisk your butter and sugar really well.2. Beat in your eggs for a good minute. This step is crucial for that crackly top.3. Do NOT overbeat your batter once the flour and cocoa powder are added. THAT creates air pockets in the batter which will give you cake-like textured brownies.
