Garam Masala Powder | Kerala Style Garam Masala Powder | Homemade Spice Powder

 


Garam masala is a spice blend widely used in Indian cuisine, from curries and lentil dishes to soups.

This is a quick Garam Masala (Indian spice) mix. Garam Masala is better when made with whole spices that have been roasted and ground.
this is a Kerala garam masala recipe and it's super simple and easy. It has a very enticing scent and adds a distinct flavor to the dishes.

Here is the recipe…


Ingredients required:

  1. Fennel Seed (പെരുംജീരകം) - 50gm, 1/2 Cup
  2. Cloves (ഗ്രാമ്പൂ) - 20gm, 1/4 Cup
  3. Cardamom (ഏലക്ക) - 20gm, 1/4 Cup
  4. Cinnamon (കറുവപ്പട്ട) - 20gm,1/4 Cup
  5. Star Anise (തക്കോലം) - 5gm,6 numbers.
  6. Black Peppercorns (കുരുമുളക് )10 gms,1 1/2 Tablespoons.

Method of preparation:
  1. Heat a pan over medium-low heat. 
  2. Dry roast all the ingredients until its raw smell goes or 3- 5 minutes. Continuously stir while roasting.
  3. Transfer the roasted masala to a plate and let t cool.
  4. Then grind well to make a fine powder.(I like a bit of texture for the garam masala, so I didn't grind it completely to a fine powder.)
  5. Store it in an airtight container. You can store it for 1-2 months.
Notes:
  1. Measuring out the ingredients accurately is very important for the perfect balance.
  2. Make sure you don't roast the spices more than the specified time otherwise it will give a charred taste to the garam masala.
  3. You can add mace and nutmeg to this masala. But trust me this masala mix tastes better than adding nutmeg.
