Peri peri grilled chicken is a mouthwatering dish for all spice and chicken lovers... This is an easy recipe with a homemade marinade.

Ingredients required in this recipe
To Marinate:
- Onion- 1 small, Chopped
- Garlic- 3 to 4 cloves
- Ginger - A small piece.
- Red Chillies- 4 to 5 numbers
- Bay leaf - 2 numbers
- Coriander Leaves- a handful.
- Black pepper Powder -1/2 Teaspoon.
- Oregano or Mixed Herbs - 1/2 Teapoon.
- Hot Paprika - 1 Teaspoon.
- Salt To Taste.
- Vinegar- 1 1/2 Tablespoons.
- Olive Oil - 2 Tablespoons.
- Lemon Juice - 1 Teaspoon.
- Chicken - 1 Kg ( Cleaned and make gashes)
- Charcoal Piece to smoke
- Oil for frying.
- Add the ingredients under marination in a food processor jar and blend it for a few seconds.
- You can add or use Kashmiri chilli powder for a bright red colour.
- Apply this marinade to cleaned chicken with gashes.
- For a smoky flavour, Burn a charcoal piece & place a small bowl inside the bowl in which the chicken is marinating.
- Pour a little oil onto it and cover immediately. Let it sit for 15 minutes.
- Keep this marinated chicken for at least 1 hour.
- Heat a nonstick pan or grill pan with a little oil or butter.
- Cook both sides of the chicken for 5 to 7 minutes or until thoroughly cooked.
- Stove to peri chicken is ready... Enjoy with parathas or butter naans.
