Brownie Cookies | Chewy Brownie Cookies

 

This chewy brownie cookie recipe is all the best parts of a chocolate brownie but in cookie form - fudgy brownie, crinkly brownie top, and crisp edges. 

This chocolaty brownie cookie is one of my all-time favorite cookie recipes.

Ingredients we need in this recipe are :

Dark Chocolate 75 gms.

Milk Chocolate -10 gms

Unsalted Butter - 50 gms 

All-purpose flour- 80 gms (2/3 Cup)

Cocoa Powder - 25 gms (1/4 Cup)

Baking Powder -1/2 Teaspoon. 

Salt -1/2 Teaspoon.

Eggs- 2 Numbers

Light brown Sugar -100 gms.

Vanilla Essence -1/2 Teaspoon.



Method of Preparation :

Mix and melt the chocolate and butter in a bowl by placing boiling water underneath.

Mix the dry ingredients such as all-purpose flour, cocoa powder, baking powder, and salt in another bowl.

In a large wide bowl add in eggs and light brown sugar. Beat the eggs and sugar until light and creamy.

Add half a teaspoon of vanilla essence and pour in the chocolate mix that we melted earlier.

Finally, combine the dry ingredients well.

Chill the batter in the refrigerator for at least 3 minutes.

Scoop or pipe the chilled dough into a tablespoon-sized ball on a baking tray with butter paper.

Bake them in a preheated oven at 180 degrees for 8 to 10 minutes.

until they are just set, and crinkly on the tops. Do not overbake as they will dry out. Leave to cool completely on the pan (they are quite soft so will need to be set) before transferring to a storage container or serving.

Store leftover brownie cookies in an airtight container at room temperature or in the fridge for up to a week.
