Here’s a recipe to start with a chocolate cake base for the torte:




Chocolate Cake Base for Torte

Ingredients:

1/2 cup all-purpose flour

1/8 cup cocoa powder

1/2 teaspoon baking powder

1/3 cup powdered sugar

2 medium eggs( at room temp)

2 tablespoons milk( at room temp)

1/8 cup oíl

1/2 teaspoon vanilla extract

For Mousse layer

Milk Chocolate - 100 gms

Dark Chocolate - 40 gms

Whipping cream -1/4 cup
 
Powdered sugar-  1 tablespoon.

Chilled milk - 1/2 cup

Condensed milk - 2 Tablespoon 

For Chocolate and nuts layer

Almonds- 1/4 cup

Whipping cream-1/4 cup

For the chocolate top layer

Milk Chocolate layer - 50gms, chopped.



Instructions:

1. Preheat the oven to 180°C. Grease a small round cake pan and spread a baking paper


2. sift flour, cocoa powder, and baking powder in a bowl.


3. In a separate bowl, whisk sugar and egg until fluffy. Pour oil and vanilla.


4. Fold in the dry ingredients until just combined. Add milk if it is required


5. Pour the batter into the pan and bake for 20- 25 minutes or until a toothpick comes out clean.


6. Let it cool completely before layering.

Mousse layer

1. Melt the milk and dark chocolate together using a double boiler or microwave, stirring until smooth. Let it cool slightly.


2. Whip the heavy cream, sugar, and vanilla in a separate bowl until soft peaks form.


3. Gently fold 2 tablespoons of melted chocolate into the whipped cream until fully combined.


4. Spread the mousse over the cooled chocolate cake base layer and refrigerate for at least 1 hour to set.

Chocolate and nuts layer

1. Dry roast almonds for 2 - 3 minutes.

2. Let it cool down completely. Chop it into small pieces.

3. Add this to the remaining melted chocolate mixture. 

4. Add whipping cream to this and mix well.



Top chocolate layer

Melt the milk chocolate using a double boiler or microwave, stirring until smooth. Let it cool slightly.

Layering of different layers

1. Trim the cake into the size of the cake tin.

2. Mix milk with condensed milk. Soak the cake with the prepared milk mixture.




3. Layer the chocolate mousse on top of the soaked chocolate cake. Distribute it evenly.and keep in the freezer for 10 minutes.


4. Pour the chocolate and nut layer on the mousse layer. Let it cool down in the freezer for about 10 minutes.



5. Pour the melted chocolate on top of it. Shake the tin to distribute it. 


6. Once it dries, Dust some cocoa powder in a thin layer.
